Abstract

Un método para retirar simultáneamente polifenoles y proteínas de bebidas poniendo en contacto la bebida con un intercambiador de iones capaz deabsorber ambos tipos de sustancias. El aspecto característico del intercambiador de ionescapaz de absorber ambos tipos de sustancias. El aspectocaracterístico del intercambiador de iones que se usa es que se trata de una matriz hidrofila porosa insoluble en agua a la cual se encuentran unidos demanera covalente grupos de intercambioionico. El método de estabilizacion de bebidas que contienen sustancias formadoras de turbidez consiste en poner encontacto la bebida con dicha matriz hidrofila porosa; recuperar la bebida de la matriz y opcionalmente regenerar la matriz. Tambiéns e refiere a un método queutiliza la matriz intercambiadora de iones, donde la matriz es una matriz hidrofila porosa insoluble en agua a la cual se han unido covalentemente gruposintercambiadores de iones para estabilizar bebidas.
