Abstract
Una salsa de queso que comprende una emulsion de agua en aceite, que contiene, basada en el peso de la salsa, desde 1 a 25% por peso de queso ydesde 3 a 10% por peso de un almidon modificado homogeneizado o una mezcla de almidon modificadoo no modificado homogenizado que contiene hasta un 40% porpeso de almidon no modificado basado sobre el peso de la mezcla de los almidones. Se describe además un procedimiento para preparar dicha salsa dequeso.
