Abstract

Se describe un procedimiento para preparar granos de leguminosas de rehidratación rápida, que comprende la cocción de los granos al vapor, bajopresión, a una temperatura de 105°- 140° C durante 3 - 40 min., se enfrían a 20 - 80°C bajo vacío, hasta una presión residual inferior a 300 mbar y se secanhasta un contenido de agua residual de 3 - 10%. Se describen, además, los granos obtenidos mediante dicho procedimiento.
