Abstract
(E)-6-オクテナール以外の、水添臭を食品に付与できる化合物を有効成分とする水添臭付与剤、当該水添臭付与剤の製造方法、当該水添臭付与剤を食品に添加する工程を含む食品に水添臭を付与する方法、食品に水添臭を付与するための上記化合物の使用、及び当該化合物を含む食品を提供する。水添臭付与剤が10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸若しくはその誘導体又はそれらの塩の酸化処理物を有効成分とする。水添臭付与剤の製造方法が、この化合物を酸化処理する工程を含む。食品に水添臭を付与する方法が、この化合物の酸化処理物を食品に添加する工程を含む。食品に水添臭を付与するためにこの化合物の酸化処理物を使用する。食品がこの化合物の酸化処理物を含む。
Description
本発明は、水添臭付与剤、その製造方法、食品に水添臭を付与する方法、食品に水添臭を付与するための酸化処理物の使用、及び水添臭付与剤を含む食品に関する。
硬化油は、マーガリン、ショートニング、バタークリーム等の油脂食品、ドーナッツ、ケーキ、チョコレート等の菓子類、その他の食品の揚げ油などに幅広く利用されている。
硬化油は、大豆油、菜種油、パーム油、ヤシ油、パーム核油等の植物性油脂、あるいは鯨油、魚油、牛脂、豚脂等の動物性油脂に、約160~約180℃の温度で、ニッケル触媒等の存在下に水素添加する方法等により製造されている。硬化油は、常温で固形の食用加工油脂であり、安価な油脂原料を用いて製造され、かつ品質が安定しているから、大量かつ広い応用範囲で使用されている。
硬化油は、「水添臭」と呼ばれる臭気を有する。水添臭は、硬化油を含む食品に加熱等の食品加工が加えられる結果、醸成されるねっとりとした上品な甘さを付与すると認識される傾向がある。例えば、ドーナッツの揚げ油として硬化油を含む油脂を使用した場合、調理されたドーナッツに甘い調理感が付与され、消費者の購買意欲を惹起し、喫食時に十分な満足感を与える。また、マーガリン、ファットスプレッド等の硬化油を使用した製品は、独特のコクと甘さがこれらの風味を増加させる。
一方、水素添加処理により油脂中のトランス脂肪酸含有量が増加することが知られている。最近、トランス脂肪酸が動脈硬化等の原因となる可能性があるとして、その表示指針が米国連邦政府より発表された結果、トランス脂肪酸を多く含む硬化油の使用が嫌われるケースも増えており、代替油脂の開発等の有効な解決法の出現が強く望まれている。
引用文献1には、(E)-6-オクテナールからなる硬化油風味付与剤が記載されている。
しかしながら、引用文献1では、硬化油を低減した油脂製品に対して硬化油風味を付与できる点が記載されているのみであり、硬化油を含まない油脂製品に対して硬化油風味を付与する点においては、不十分である。
そのため、(E)-6-オクテナール以外にも、水添臭を油脂に付与できる化合物を有効成分とする水添臭付与剤が求められていた。

本発明が解決しようとする課題は、(E)-6-オクテナール以外の、水添臭を食品に付与できる化合物を有効成分とする水添臭付与剤を提供することである。また、本発明が解決しようとする別の課題は、当該水添臭付与剤の製造方法、当該水添臭付与剤を食品に添加する工程を含む食品に水添臭を付与する方法、食品に水添臭を付与するための上記化合物の使用、及び前記水添臭付与剤を含む食品を提供することである。
本発明の発明者らは、鋭意検討した結果、10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸若しくはその誘導体又はそれらの塩の酸化処理物が、水添臭を食品に付与できることを見出した。本発明はこれらの知見に基づき完成されるに至った。
本発明の上記課題は、下記の手段により解決された。
本発明は、10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸若しくはその誘導体又はそれらの塩の酸化処理物を有効成分とする、水添臭付与剤である。
前記脂肪酸は、好ましくは10-ヒドロキシ-12-オクタデセン酸を含む。
上記酸化処理は、好ましくは加熱酸化処理である。
上記酸化処理物の過酸化物価は、好ましくは0.5以上200以下である。
上記水添臭付与剤は、好ましくは、甘い風味、及び乳の風味からなる群から選ばれる少なくとも1つの風味を付与する。
本発明は、10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸若しくはその誘導体又はそれらの塩の酸化処理物を有効成分とする、水添臭付与剤である。

[水添臭付与剤]
本発明の水添臭付与剤は、10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸(以下、「C18脂肪酸」と称する場合がある)若しくはその誘導体又はそれらの塩(以下、「C18脂肪酸等」と称する場合がある)の酸化処理物を有効成分とする。
なお、本明細書において数値範囲の上限値及び下限値を示したときは、上限値及び下限値を適宜組み合わせることができ、それにより得られた数値範囲も開示しているものとする。
[水添臭付与剤]
本発明の水添臭付与剤は、10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸(以下、「C18脂肪酸」と称する場合がある)若しくはその誘導体又はそれらの塩(以下、「C18脂肪酸等」と称する場合がある)の酸化処理物を有効成分とする。
本発明において、水添臭の付与とは、食品を食した時、独特の甘い、乳の臭い(香り)や、独特の甘い、乳の味を感じさせる風味を付与することである。本発明の水添臭付与剤は食品に対し、好ましくは、甘い風味、及び乳の風味からなる群から選ばれる少なくとも1つの風味を付与する。
C18脂肪酸等は特定の脂肪酸等に限定されない。C18脂肪酸等として、α-リノレン酸の腸内細菌叢による代謝経路における各種脂肪酸(図1参照)、リノール酸の腸内細菌叢による代謝経路における各種脂肪酸(図2参照)、γ-リノレン酸の腸内細菌叢による代謝経路における各種脂肪酸(図3参照)等が挙げられる。
C18脂肪酸等は、好ましくは10-ヒドロキシ-12-オクタデセン酸若しくはその誘導体又はそれらの塩(以下、「オクタデセン酸等」と称する場合がある)を含む。
オクタデセン酸等には、シス体とトランス体がある。10-ヒドロキシ-シス-12-オクタデセン酸(HYA)は、図2に記載される式で示される。HYAは、国際公開2013/168310号に開示されているオキソ脂肪酸の製造方法等により製造される。また、HYAは市販されており、当該市販品として、日東薬品工業株式会社製HYA-50等が挙げられる。
オクタデセン酸等には、シス体とトランス体がある。10-ヒドロキシ-シス-12-オクタデセン酸(HYA)は、図2に記載される式で示される。HYAは、国際公開2013/168310号に開示されているオキソ脂肪酸の製造方法等により製造される。また、HYAは市販されており、当該市販品として、日東薬品工業株式会社製HYA-50等が挙げられる。
10-ヒドロキシ-12-オクタデセン酸の誘導体は、10-ヒドロキシ-12-オクタデセン酸の2~9、及び11~17位に独立して1つ又は2つの置換基を有する。10-ヒドロキシ-12-オクタデセン酸以外のC18脂肪酸の誘導体も、ヒドロキシ基又はオキソ基が結合していない部位に独立して1つ又は2つの置換基を有する。2つの置換基は互いに同一でも異なっていてもよい。2つの置換基は互いに連結して環を形成してもよい。また、環、例えば脂環、芳香族環、ヘテロ環は更に縮環して縮合環を形成していてもよい。さらに10-ヒドロキシ-12-オクタデセン酸をはじめとするC18脂肪酸の誘導体は、1位のカルボキシル基が、R-OHで示される化合物でエステル化されていてもよい。なお、10-ヒドロキシ-12-オクタデセン酸をはじめとするC18脂肪酸の誘導体は、上記置換基を有し、かつ上記カルボキシル基がエステル化された化合物であってもよい。
本発明の水添臭付与剤は、上記C18脂肪酸等の酸化処理物の1種又は2種以上を有効成分とする。

上記置換基は特に限定されないが、アルキル基、シクロアルキル基、アルケニル基、アルキニル基、アリール基、ヘテロアリール基(芳香族ヘテロ環基)、又は脂肪族へテロ環基が好ましい。
アルキル基は、炭素数が1以上36以下のアルキル基が好ましく、1以上18以下のアルキル基がより好ましく、1以上6以下のアルキル基が更に好ましく、1以上3以下のアルキル基が特に好ましい。アルキル基として、例えばメチル、エチル、プロピル、イソプロピル、ブチル、tert-ブチル、ペンチル、ヘキシル等が挙げられる。
シクロアルキル基は、炭素数が3以上10以下のシクロアルキル基が好ましく、3以上8以下のシクロアルキル基がより好ましい。シクロアルキル基として、例えばシクロプロピル、シクロペンチル、シクロヘキシル等が挙げられる。
アルケニル基は、炭素数が2以上36以下のアルケニル基が好ましく、2以上18以下のアルケニル基がより好ましく、2以上6以下のアルケニル基が更に好ましい。アルケニル基として、例えばビニル、アリル、ブテニル、ヘキセニル等が挙げられる。
アルキニル基は、炭素数が2以上36以下のアルキニル基が好ましく、2以上18以下のアルキニル基がより好ましく、2以上4以下のアルキニル基が更に好ましい。アルキニル基として、例えばエチニル、ブチニル、ヘキシニル等が挙げられる。
アリール基は、炭素数6以上24以下のアリール基が好ましく、炭素数6以上12以下のアリール基がより好ましい。アリール基として、例えばフェニル基が挙げられる。
芳香族ヘテロ環が縮合環である場合、単環の芳香族ヘテロ環のみからなる基に加えて、単環の芳香族ヘテロ環に他の環、例えば、芳香族炭化水素環、脂肪族炭化水素環又はヘテロ環が縮合した縮合ヘテロ環からなる基を包含する。芳香族ヘテロ環を構成する環構成ヘテロ原子の数は1個以上であればよく、ヘテロ原子としては、窒素原子、酸素原子、硫黄原子が好ましい。また、芳香族ヘテロ環の環員数としては、3~8員環が好ましく、5員環又は6員環がより好ましい。芳香族ヘテロ環の炭素数は5以上24以下であることが好ましく、5以上18以下であることがより好ましく、5以上10以下であることが更に好ましい。芳香族ヘテロ環の炭素数は5以上24以下であることが好ましく、5以上18以下であることがより好ましく、5以上10以下であることが更に好ましい。5員環の芳香族ヘテロ環及び5員環の芳香族ヘテロ環を含む縮合ヘテロ環としては、例えば、ピロール環、イミダゾール環、ピラゾール環、オキサゾール環、チアゾール環、トリアゾール環、フラン環、チオフェン環、ベンゾイミダゾール環、ベンゾオキサゾール環、ベンゾチアゾール環、インドリン環、インダゾール環の各環基が挙げられる。また、6員環の芳香族ヘテロ環及び6員環の芳香族ヘテロ環を含む縮合ヘテロ環としては、例えば、ピリジン環、ピリミジン環、ピラジン環、トリアジン環、キノリン環、キナゾリン環の各環基が挙げられる。
脂肪族ヘテロ環基は、脂肪族ヘテロ環のみからなる単環の基と、脂肪族ヘテロ環に他の環(例えば、脂肪族環)が縮合した脂肪族縮合ヘテロ環からなる基とを包含する。脂肪族ヘテロ環を構成する環構成ヘテロ原子の数は1個以上であればよく、ヘテロ原子としては、窒素原子、酸素原子、硫黄原子が好ましい。また、脂肪族ヘテロ環の環員数としては、3~8員環が好ましく、5員環又は6員環がより好ましい。脂肪族ヘテロ環の炭素数は0以上24以下であることが好ましく、1以上18以下であることがより好ましく、更に好ましくは2以上10以下、特に好ましくは3以上5以下である。脂肪族ヘテロ環の好ましい具体例としては、ピロリジン環、オキソラン環、チオラン環、ピペリジン環、テトラヒドロフラン環、オキサン環(テトラヒドロピラン環)、チアン環、ピペラジン環、モルホリン環、キヌクリジン環、ピロリジン環、アゼチジン環、オキセタン環、アジリジン環、ジオキサン環、ペンタメチレンスルフィド環、γ-ブチロラクトン等を挙げることができる。
上記置換基として、以下の基も挙げられる。

上記R-OHで示される化合物のRは特に限定されないが、上記アルキル基、シクロアルキル基、アルケニル基、アルキニル基、アリール基、ヘテロアリール基(芳香族ヘテロ環基)、又は脂肪族へテロ環基が好ましい。また、上記R-OHで示される化合物は2以上の水酸基を有する多価アルコールであってもよい。当該多価アルコールとして、エチレングリコール、ネオペンチルグリコール、1,3-プロパンジオール、1,4-ブタンジオール、ジエチレングリコール、ジプロピレングリコール、ベンゼンジオール等の2価アルコール、グリセリン、トリメチロールエタン、トリメチロールプロパン、3-メチルペンタン-1,3,5-トリオール等の3価アルコール、ペンタエリスリトール、ジグリセリン等の4価アルコール、アドニトール、アラビトール、キシリトール、トリグリセリン等の5価アルコール、ジペンタエリスリトール、マンニトール、D-ソルビトールイジトール、イノシトール、ダルシトール、タロース、アロース等の6価アルコール等が挙げられる。
C18脂肪酸の誘導体が、C18脂肪酸のカルボキシル基が多価アルコールによりエステル化された化合物である場合、C18脂肪酸のカルボキシル基は多価アルコールの少なくとも1つの水酸基によりエステル化される。多価アルコールの、C18脂肪酸によりエステル化されていない水酸基は、C18脂肪酸以外のカルボン酸によりエステル化されていてもよい。
好ましいC18脂肪酸エステルは、上記カルボキシル基が1~3価のアルコールでエステル化されたエステルである。より好ましいC18脂肪酸エステルは、上記カルボキシル基がメタノール、エタノール、1-プロパノール、1-ブタノール、1-ペンタノール、1-ヘキサノール、グリセリンでエステル化されたエステルである。更に好ましいC18脂肪酸エステルは、C18脂肪酸メチルエステル、C18脂肪酸エチルエステル、モノC18脂肪酸グリセリル、ジC18脂肪酸グリセリル、トリC18脂肪酸グリセリルである。
C18脂肪酸の誘導体が、C18脂肪酸のカルボキシル基が多価アルコールによりエステル化された化合物である場合、C18脂肪酸のカルボキシル基は多価アルコールの少なくとも1つの水酸基によりエステル化される。多価アルコールの、C18脂肪酸によりエステル化されていない水酸基は、C18脂肪酸以外のカルボン酸によりエステル化されていてもよい。
好ましいC18脂肪酸エステルは、上記カルボキシル基が1~3価のアルコールでエステル化されたエステルである。より好ましいC18脂肪酸エステルは、上記カルボキシル基がメタノール、エタノール、1-プロパノール、1-ブタノール、1-ペンタノール、1-ヘキサノール、グリセリンでエステル化されたエステルである。更に好ましいC18脂肪酸エステルは、C18脂肪酸メチルエステル、C18脂肪酸エチルエステル、モノC18脂肪酸グリセリル、ジC18脂肪酸グリセリル、トリC18脂肪酸グリセリルである。
C18脂肪酸若しくはその誘導体の塩は、金属塩、有機塩基塩を含む。当該塩は、好ましくは金属塩である。
上記金属塩は、アルカリ金属塩、及びアルカリ土類金属塩からなる群から選ばれる少なくとも1つを含む。アルカリ金属は、リチウム、ナトリウム、及びカリウムからなる群から選ばれる少なくとも1つを含む。アルカリ土類金属はマグネシウム、カルシウム、及びバリウムからなる群から選ばれる少なくとも1つを含む。
上記金属塩は、アルカリ金属塩、及びアルカリ土類金属塩からなる群から選ばれる少なくとも1つを含む。アルカリ金属は、リチウム、ナトリウム、及びカリウムからなる群から選ばれる少なくとも1つを含む。アルカリ土類金属はマグネシウム、カルシウム、及びバリウムからなる群から選ばれる少なくとも1つを含む。
上記有機塩基は特に制限されない。当該有機塩基として、芳香族アミン、脂肪族アミン等が挙げられる。好ましい有機塩基として、ピリジン、ルチジン、コリジン、トリエチルアミン、ジエチルアミン、N,N-ジイソプロピルエチルアミン、N,N-ジイソプロピルペンチルアミン、モルホリン、ピペリジン及びピロリジン等が挙げられる。より好ましい有機塩基として、ピリジン、トリエチルアミン、及びピペリジンが挙げられる。
本発明が奏する作用効果は、C18脂肪酸若しくはその誘導体又はそれらの塩に共通する構造の酸化処理に由来すると考えられる。したがって、C18脂肪酸の誘導体又はそれらの塩の酸化処理物を有効成分とする水添臭付与剤も、C18脂肪酸の酸化処理物を有効成分とする水添臭付与剤と同様の作用効果を奏する。
上記酸化処理物の過酸化物価(以下、「POV」とも称する)は、好ましくは200以下であり、より好ましくは150以下であり、更に好ましくは100以下であり、更により好ましくは80以下であり、特に好ましくは60以下である。また、POVは、好ましくは0.5以上であり、より好ましくは1以上であり、更に好ましくは5以上であり、更により好ましくは10以上であり、特に好ましくは15以上である。POVは、例えば、「基準油脂分析試験法2.5.2過酸化物価」(日本油化学協会)に準じて、測定される。
本発明の水添臭付与剤の製造方法は、C18脂肪酸等を酸化処理する工程を含む。
上記酸化処理の方法は特に制限されないが、好ましくは加熱酸化処理である。加熱酸化処理の加熱温度は好ましくは70℃以上200℃以下、より好ましくは70℃以上180℃以下、更に好ましくは80℃以上150℃以下、更により好ましくは80℃以上120℃以下、特に好ましくは90℃以上110℃以下である。加熱酸化処理の加熱時間は好ましくは1時間以上150時間以下、より好ましくは5時間以上130時間以下、更に好ましくは10時間以上100時間以下、更により好ましくは20時間以上90時間以下、より一層好ましくは25時間以上80時間以下、特に好ましくは30時間以上70時間以下、殊更好ましくは30時間以上60時間以下である。
さらに上記酸化処理の方法は、C18脂肪酸等の常温保管に伴う酸化処理であってもよい。
なお、加熱の方法は、通常の手段を使用して行うことができる。加熱手段に特に制限はなく、常法により、例えば釜等の容器に備わる電熱式、直火バーナー式、電磁誘導加熱式、マイクロ波式、蒸気式、熱風式の加熱手段などで加熱すればよい。
さらに上記酸化処理の方法は、C18脂肪酸等の常温保管に伴う酸化処理であってもよい。
なお、加熱の方法は、通常の手段を使用して行うことができる。加熱手段に特に制限はなく、常法により、例えば釜等の容器に備わる電熱式、直火バーナー式、電磁誘導加熱式、マイクロ波式、蒸気式、熱風式の加熱手段などで加熱すればよい。
上記酸化処理時には、酸素を供給しなくてもよいが、酸素を供給してもよい。酸素の供給源としては、酸素単独でもかまわないし、空気等の酸素を含むものでもよく、好ましくは空気である。当該原料は攪拌されることが好ましい。
上記酸化処理物のPOVを経時的に観察すると、通常、まず上昇し、ピークアウト後、ピーク値より小さくなっていく。本発明の水添臭付与剤は、好ましくは、POVの経時変化において、ピークアウト後のPOVが200以下である上記酸化処理物を含み、より好ましくは150以下であり、更に好ましくは100以下であり、更により好ましくは80以下であり、特に好ましくは60以下である。また、ピークアウト後のPOVは、好ましくは1以上であり、より好ましくは5以上であり、更に好ましくは10以上であり、特に好ましくは15以上である。
本発明の水添臭付与剤は、上記酸化処理物以外に、適宜任意の成分を配合してもよい。任意の成分としては、例えば、乳化剤、香料、酸味料、甘味料、調味料、酸化防止剤、消泡剤、着色料、pH調整剤、増粘安定剤、食品保存料、生理活性物質等が挙げられる。
[酸化処理物の応用]
上記酸化処理物を有効成分とする本発明の水添臭付与剤は、食品に独特の甘い風味、及び乳の風味からなる群から選ばれる少なくとも1つの風味を付与するため、食品に添加される。添加方法は特に限定されず、例えば、上記酸化処理物がそのまま食品に添加されてもよいし、上記酸化処理物を食用油脂に溶かし風味油の形態としてから食品に添加されてもよい。また、本発明の水添臭付与剤が添加された食用油脂を用いて食品をフライしてもよく、当該油でフライされた食品にも独特の甘い風味、及び乳の風味からなる群から選ばれる少なくとも1つの風味を付与することができる。
上記酸化処理物を有効成分とする本発明の水添臭付与剤は、食品に独特の甘い風味、及び乳の風味からなる群から選ばれる少なくとも1つの風味を付与するため、食品に添加される。添加方法は特に限定されず、例えば、上記酸化処理物がそのまま食品に添加されてもよいし、上記酸化処理物を食用油脂に溶かし風味油の形態としてから食品に添加されてもよい。また、本発明の水添臭付与剤が添加された食用油脂を用いて食品をフライしてもよく、当該油でフライされた食品にも独特の甘い風味、及び乳の風味からなる群から選ばれる少なくとも1つの風味を付与することができる。
また、本発明の水添臭付与剤が添加される食品は特に限定されないが、例えば、
食用油脂;
マーガリン、スプレッド、バター、マヨネーズ、ドレッシング、クリーム等の油脂加工食品(食用油脂を原料として含有する食品を指す);
牛乳、豆乳、乳飲料、乳酸飲料、スポーツ飲料等の飲料;
ドーナツ、クッキー、パイ、ケーキ、マドレーヌ、ゼリー、プディング、ムース、チョコレート、グミ等の菓子類;
菓子パン等のパン類;
そば、うどん、ラーメン、パスタ等の麺類;
炒飯等の米飯類;
チーズ、バター、ヨーグルト等の乳製品;
ハンバーグ、ハム、ソーセージ等の畜肉加工食品;
ちくわ、蒲鉾等の水産加工食品;
コーンスープ、コンソメスープ、ポタージュ等のスープ類;
中華の素、焼き肉のタレ等の調味料類やソース類;
冷凍食品、煮物、揚げ物、焼き物、健康食品等が挙げられる。本発明の水添臭付与剤が添加される食品は、好ましくは食用油脂及び油脂加工食品の少なくとも1種であり、より好ましくは食用油脂である。
食用油脂;
マーガリン、スプレッド、バター、マヨネーズ、ドレッシング、クリーム等の油脂加工食品(食用油脂を原料として含有する食品を指す);
牛乳、豆乳、乳飲料、乳酸飲料、スポーツ飲料等の飲料;
ドーナツ、クッキー、パイ、ケーキ、マドレーヌ、ゼリー、プディング、ムース、チョコレート、グミ等の菓子類;
菓子パン等のパン類;
そば、うどん、ラーメン、パスタ等の麺類;
炒飯等の米飯類;
チーズ、バター、ヨーグルト等の乳製品;
ハンバーグ、ハム、ソーセージ等の畜肉加工食品;
ちくわ、蒲鉾等の水産加工食品;
コーンスープ、コンソメスープ、ポタージュ等のスープ類;

冷凍食品、煮物、揚げ物、焼き物、健康食品等が挙げられる。本発明の水添臭付与剤が添加される食品は、好ましくは食用油脂及び油脂加工食品の少なくとも1種であり、より好ましくは食用油脂である。
<食用油脂>
上記食用油脂は、食品分野で使用される通常の食用油脂である。上記食用油脂として、
菜種油、大豆油、ヒマワリ油、綿実油、落花生油、米油、コーン油、サフラワー油、オリーブ油、カポック油、ごま油、エゴマ油、アマニ油、月見草油、パーム油、シア脂、サル脂、カカオ脂、やし油、パーム核油等の植物性油脂、
ラード、牛脂、鶏油、乳脂、魚油などの動物性油脂、
中鎖脂肪酸トリグリセリドなどの合成油脂が挙げられる。また、上記植物油脂、動物性油脂及び合成油脂のそれぞれを、硬化、分別及びエステル交換の少なくとも1種の処理をした加工油脂を使用することもできる。それら油脂類は単独で、又は混合されて用いられる。なかでも、上記食用油脂は、菜種油、大豆油、パーム油、コーン油、ヒマワリ油、オリーブ油、綿実油、米油、サフラワー油、ラード及び牛脂の少なくとも1種を含むことが好ましく、菜種油、大豆油、パーム油、コーン油及び米油の少なくとも1種を含むことがより好ましい。
上記食用油脂は、食品分野で使用される通常の食用油脂である。上記食用油脂として、
菜種油、大豆油、ヒマワリ油、綿実油、落花生油、米油、コーン油、サフラワー油、オリーブ油、カポック油、ごま油、エゴマ油、アマニ油、月見草油、パーム油、シア脂、サル脂、カカオ脂、やし油、パーム核油等の植物性油脂、
ラード、牛脂、鶏油、乳脂、魚油などの動物性油脂、
中鎖脂肪酸トリグリセリドなどの合成油脂が挙げられる。また、上記植物油脂、動物性油脂及び合成油脂のそれぞれを、硬化、分別及びエステル交換の少なくとも1種の処理をした加工油脂を使用することもできる。それら油脂類は単独で、又は混合されて用いられる。なかでも、上記食用油脂は、菜種油、大豆油、パーム油、コーン油、ヒマワリ油、オリーブ油、綿実油、米油、サフラワー油、ラード及び牛脂の少なくとも1種を含むことが好ましく、菜種油、大豆油、パーム油、コーン油及び米油の少なくとも1種を含むことがより好ましい。
<副原料>
上記水添臭付与剤が添加される食用油脂又は油脂加工食品には、上記酸化処理物及び食用油脂に加えて、乳製品、増粘安定剤、食塩、塩化カリウムなどの塩味剤、酢酸、乳酸、グルコン酸などの酸味料、糖類、甘味料、着色料、酸化防止剤、植物蛋白、卵および各種卵加工品、着香料、調味料、pH調整剤、食品保存料、果実、果汁、及び香辛料等の少なくとも1種を含有させてもよい。
上記水添臭付与剤が添加される食用油脂又は油脂加工食品には、上記酸化処理物及び食用油脂に加えて、乳製品、増粘安定剤、食塩、塩化カリウムなどの塩味剤、酢酸、乳酸、グルコン酸などの酸味料、糖類、甘味料、着色料、酸化防止剤、植物蛋白、卵および各種卵加工品、着香料、調味料、pH調整剤、食品保存料、果実、果汁、及び香辛料等の少なくとも1種を含有させてもよい。
<フライ食品>
本発明の水添臭付与剤又は水添臭付与剤が添加された食用油脂でフライされたフライ食品として、特に限定されないが、例えば、ドーナツ、揚げパン、カレーパン、ピロシキ、アメリカンドッグ、クルトン、かりんとう、揚げ米菓、スナック菓子、フリッター類、トンカツ、チキンカツ、唐揚げ、魚フライ、天ぷら、コロッケ、メンチカツ、ポテトフライ、チキンナゲット、ハッシュドポテト、揚げ豆腐、インスタントラーメン等が挙げられる。
本発明の水添臭付与剤又は水添臭付与剤が添加された食用油脂でフライされたフライ食品として、特に限定されないが、例えば、ドーナツ、揚げパン、カレーパン、ピロシキ、アメリカンドッグ、クルトン、かりんとう、揚げ米菓、スナック菓子、フリッター類、トンカツ、チキンカツ、唐揚げ、魚フライ、天ぷら、コロッケ、メンチカツ、ポテトフライ、チキンナゲット、ハッシュドポテト、揚げ豆腐、インスタントラーメン等が挙げられる。
以下、本発明を実施例に基づき更に詳細に説明するが、本発明はこれらに限定されるものではない。
実施例及び比較例において、各種食品の風味は下記基準1又は2に従って評価された。

試験例1
HYA-50(日東薬品工業株式会社製、HYAの純度約50%)を被覆しているソフトカプセルを割り、スパテラを用いて中身を取り出した。カプセルから取り出したHYA-50を0.5gずつランシマット法用試験管(メトロームジャパン株式会社製)に入れ、それぞれを、空気を吹き込まずにブロックヒーター(メトロームジャパン株式会社製ランシマット743型)で98℃に加熱した。経時的にHYA-50の酸化処理物のPOVを測定し、当該酸化処理物のにおいを4名のパネルが観測した。POVは、「基準油脂分析試験法2.5.2過酸化物価」(日本油化学協会)に準じて測定された。なお、加熱酸化処理0時間のHYA-50については、常温保管に伴う酸化処理がされていると考えられる。結果を表1に示す。
HYA-50(日東薬品工業株式会社製、HYAの純度約50%)を被覆しているソフトカプセルを割り、スパテラを用いて中身を取り出した。カプセルから取り出したHYA-50を0.5gずつランシマット法用試験管(メトロームジャパン株式会社製)に入れ、それぞれを、空気を吹き込まずにブロックヒーター(メトロームジャパン株式会社製ランシマット743型)で98℃に加熱した。経時的にHYA-50の酸化処理物のPOVを測定し、当該酸化処理物のにおいを4名のパネルが観測した。POVは、「基準油脂分析試験法2.5.2過酸化物価」(日本油化学協会)に準じて測定された。なお、加熱酸化処理0時間のHYA-50については、常温保管に伴う酸化処理がされていると考えられる。結果を表1に示す。
加熱酸化処理開始から20時間経過後、POVはピークアウトし、その後POVは低下し続けた。加熱酸化処理開始から35時間以上経過後に前記加熱酸化処理物の臭いを嗅いでみると、前記加熱酸化処理物は乳の香りを放出していた。
試験例2:実施例1~3
試験例1でHYA-50を50時間加熱酸化処理して得られた酸化処理物が12質量%となるようにMCTオイル(花王株式会社製ココナードMT)を用いて希釈し、当該希釈されたHYA-50を、HYAが表2に示す濃度となるように600gのパーム油(株式会社J-オイルミルズ製フライファットMS)に添加し、各実施例のフライ油を調製した。対照例のフライ油としては、前記パーム油を用いた。日本食研株式会社製ドーナツボールミックスを用いてドーナツ生地を作製し、当該ドーナツ生地30gを丸く成形し、各フライ油で、160℃で5分間油ちょうし、各ドーナツを調理した。6名のパネルが各ドーナツを試食し、前記基準1に従って各ドーナツの風味を評価し、平均点を算出した。結果を表2に示す。

フライ油中の、加熱酸化処理して得られた酸化処理物の濃度が高くなるほど、これらのフライ油で油ちょうされたドーナツの乳の香り、乳の味、及び甘い味が強くなった。
試験例3:実施例4及び5
試験例1でHYA-50を50時間加熱酸化処理して得られた酸化処理物が10質量%となるようにMCTオイル(花王株式会社製ココナードMT)を用いて希釈し、当該希釈されたHYA-50を、HYAが表3に示す濃度となるように300gのパーム油(株式会社J-オイルミルズ製フライファットMS)に添加し、各実施例のフライ油を調製した。対照例のフライ油としては、前記パーム油を用いた。日本食研株式会社製ドーナツボールミックスを用いてドーナツ生地を作製し、当該ドーナツ生地20gを丸く成形し、各フライ油で、160℃で5分間油ちょうし、各ドーナツを調理した。
11名のパネルが各ドーナツを試食し、前記基準1に従って各ドーナツの風味を全パネルの総意で評価した。結果を表3に示す。

試験例4:実施例6~13
試験例1で得られた加熱酸化処理されていない、又は加熱酸化処理された各HYA-50が10質量%となるようにMCTオイル(花王株式会社製ココナードMT)を用いて希釈し、更に1.2gの希釈された各HYA-50を300gのパーム油(株式会社J-オイルミルズ製フライファットMS)に0.04質量%添加し、HYA濃度が0.02質量%となるように各実施例のフライ油を調製した。対照例のフライ油としては、前記パーム油を用いた。日本食研株式会社製ドーナツボールミックスを用いてドーナツ生地を作製し、当該ドーナツ生地20gを丸く成形し、各フライ油で、160℃で5分間油ちょうし、各ドーナツを調理した。4名のパネルが各ドーナツを試食し、前記基準2に従って各ドーナツの風味を評価し、平均点を算出した。結果を表4及び図4に示す。

図4において、各実施例の4つのバーは、左から甘い香り、甘い味、乳の香り、乳の味を示す。50~70時間加熱酸化処理された酸化処理物を含むフライ油で油ちょうされたドーナツの甘い味、及び乳の味が特に強かった。
試験例5:実施例14~19
ヘキサンとジエチルエーテルを9:1(質量比)で混合した混合溶媒を、Sep-Pack(登録商標)Vac 35cc シリカカートリッジ(Waters社製)に流した。次いで前記同様にカプセルから取り出したHYA-50約1.5gを、前記混合溶媒と同一組成の混合溶媒1mLに溶解し、得られた溶液を前記シリカカートリッジにアプライし、前記混合溶媒と同一組成の混合溶媒200mLでHYA以外の脂肪酸を溶出し、更に200mLのジエチルエーテルでHYAを溶出して純度82%のHYA(HYA-82)を得た。
ヘキサンとジエチルエーテルを9:1(質量比)で混合した混合溶媒を、Sep-Pack(登録商標)Vac 35cc シリカカートリッジ(Waters社製)に流した。次いで前記同様にカプセルから取り出したHYA-50約1.5gを、前記混合溶媒と同一組成の混合溶媒1mLに溶解し、得られた溶液を前記シリカカートリッジにアプライし、前記混合溶媒と同一組成の混合溶媒200mLでHYA以外の脂肪酸を溶出し、更に200mLのジエチルエーテルでHYAを溶出して純度82%のHYA(HYA-82)を得た。
前記HYA-82を0.5gずつランシマット法用試験管(メトロームジャパン株式会社製)に入れ、それぞれを、空気を吹き込まずにブロックヒーター(メトロームジャパン株式会社製ランシマット743型)で98℃に加熱した。加熱酸化処理されていないHYA-82、10時間加熱酸化処理されたHYA-82、50時間加熱酸化処理されたHYA-82のPOVを測定した。POVは、「基準油脂分析試験法2.5.2過酸化物価」(日本油化学協会)に準じて測定された。なお、加熱酸化処理0時間のHYA-82については、常温保管に伴う酸化処理がされていると考えられる。結果を表5に示す。
前記加熱酸化処理されていない、又は加熱酸化処理された0.1gのHYA-82を、0.9gのMCTオイル(花王株式会社製ココナードMT)を用いて希釈し、当該希釈されたHYA-82を、HYA濃度が0.0016質量%、又は0.0164質量%となるように300gのパーム油(株式会社J-オイルミルズ製フライファットMS)に添加し、各実施例のフライ油を調製した。対照例のフライ油としては、前記パーム油を用いた。日本食研株式会社製ドーナツボールミックスを用いてドーナツ生地を作製し、当該ドーナツ生地30gを丸く成形し、各フライ油で、160℃で5分間油ちょうし、各ドーナツを調理した。4名のパネルが各ドーナツを試食し、前記基準2に従って各ドーナツの風味を評価し、平均点を算出した。結果を表6、表7、図5及び図6に示す。前記フライ油中のHYAの濃度が0.0016質量%である場合の結果は表6及び図5に、当該濃度が0.0164質量%の場合の結果は表7及び図6に示されている。
図5及び6において、各実施例の4つのバーは、左から甘い香り、甘い味、乳の香り、乳の味を示す。HYA-82の加熱酸化処理時間が長くなるほど、また前記フライ油中の加熱酸化処理された酸化処理物の濃度が高くなるほど、甘い香り、甘い味、乳の香り、及び乳の味が強くなる傾向を確認できた。
試験例6:実施例20及び21
ボウル中の60℃に融解したショートニング(株式会社J-オイルミルズ製ファシエ、100%植物油脂使用)220gに、試験例1で得られた0.044g(マーガリン中のHYA濃度0.01質量%)又は0.088g(マーガリン中のHYA濃度0.02質量%)の50時間加熱酸化処理したHYA-50と、0.108gの香料ミックス(動物由来原料不使用)を溶解し、添加して撹拌した。その後、35.2gのオーツミルク(ダノンジャパン株式会社製alproオーツミルク砂糖不使用)を当該ボウルに添加し、ホイッパーで撹拌して乳化させた後、氷水を入れたボウルに浸して冷却して結晶を析出させながら、ホイッパーで撹拌し続け、各実施例のマーガリンを調製した。対照例のマーガリンは、HYA-50を添加しなかったことを除き、前記各実施例のマーガリンと同様に調製した。
ボウル中の60℃に融解したショートニング(株式会社J-オイルミルズ製ファシエ、100%植物油脂使用)220gに、試験例1で得られた0.044g(マーガリン中のHYA濃度0.01質量%)又は0.088g(マーガリン中のHYA濃度0.02質量%)の50時間加熱酸化処理したHYA-50と、0.108gの香料ミックス(動物由来原料不使用)を溶解し、添加して撹拌した。その後、35.2gのオーツミルク(ダノンジャパン株式会社製alproオーツミルク砂糖不使用)を当該ボウルに添加し、ホイッパーで撹拌して乳化させた後、氷水を入れたボウルに浸して冷却して結晶を析出させながら、ホイッパーで撹拌し続け、各実施例のマーガリンを調製した。対照例のマーガリンは、HYA-50を添加しなかったことを除き、前記各実施例のマーガリンと同様に調製した。
210gの各マーガリンを、ミキサーを使用して低速で30秒間、次いで中速で1分間攪拌し、108gの上白糖及び2gの食塩を加えて更に中速で1分間攪拌した。次いで12gの水を加えて中速で1分間攪拌し、300gの強力粉を加えて低速で30秒間攪拌し、各クッキー生地を調製した。前記生地を直径4cmの棒状に成形して冷蔵庫内で冷やして固め、約1cmの厚さにカットした。カットされた各生地を、二段オーブンを使用して上段180℃/下段180℃で18~20分間焼成し、各クッキーを得た。4名のパネルが各クッキーを喫食し、前記基準1に従って各クッキーの風味を全パネルの総意で評価した。結果を表8に示す。
マーガリン中のHYA濃度に関わらず、加熱酸化処理された酸化処理物を含むマーガリンが原料とされたクッキーの乳の香り、乳の味、甘い香り、甘い味、及び味の厚みは、酸化処理物を含まないマーガリンが原料とされたクッキーのものより強いことが確認された。
試験例7:実施例22~27
ボウル中の60℃に融解したショートニング(株式会社J-オイルミルズ製ファシエ)220gに、試験例1で得られた0.05239g(マーガリン中のHYA濃度0.01質量%)の、加熱酸化処理されていない、又は20~70時間加熱酸化処理したHYA-50を添加して攪拌した。その後、35.2gのオーツミルク(ダノンジャパン株式会社製alproオーツミルク砂糖不使用)を当該ボウルに添加し、ホイッパーで撹拌して乳化させた後、氷水を入れたボウルに浸して冷却して結晶を析出させながら、ホイッパーで撹拌し続け、各実施例のマーガリンを調製した。対照例のマーガリンは、HYA-50を添加しなかったことを除き、前記各実施例のマーガリンと同様に調製した。
ボウル中の60℃に融解したショートニング(株式会社J-オイルミルズ製ファシエ)220gに、試験例1で得られた0.05239g(マーガリン中のHYA濃度0.01質量%)の、加熱酸化処理されていない、又は20~70時間加熱酸化処理したHYA-50を添加して攪拌した。その後、35.2gのオーツミルク(ダノンジャパン株式会社製alproオーツミルク砂糖不使用)を当該ボウルに添加し、ホイッパーで撹拌して乳化させた後、氷水を入れたボウルに浸して冷却して結晶を析出させながら、ホイッパーで撹拌し続け、各実施例のマーガリンを調製した。対照例のマーガリンは、HYA-50を添加しなかったことを除き、前記各実施例のマーガリンと同様に調製した。
210gの各マーガリンを、ミキサーを使用して低速で30秒間、次いで中速で1分間攪拌し、108gの上白糖及び2gの食塩を加えて更に中速で1分間攪拌した。次いで12gの水を加えて中速で1分間攪拌し、300gの強力粉を加えて低速で30秒間攪拌し、各クッキー生地を調製した。前記生地を直径4cmの棒状に成形して冷蔵庫内で冷やして固め、約1cmの厚さにカットした。カットされた各生地を、二段オーブンを使用して上段180℃/下段180℃で18~20分間焼成し、各クッキーを得た。4名のパネルが各クッキーを喫食し、前記評価基準2に従って評価して平均点を算出した。結果を表9及び図7に示す。
図7において、各実施例の4つのバーは、左から甘い香り、甘い味、乳の香り、乳の味を示す。35~70時間加熱酸化処理された酸化処理物を含むマーガリンを原料とするクッキーの甘い香り、甘い味、乳の香り、及び乳の味が特に強かった。
試験例8:実施例28~33
4名のパネルが、加熱酸化処理されていない、又は20~70時間加熱酸化処理したHYA-50を含む試験例7で調製した各実施例のマーガリン及び試験例7で調製した対照例のマーガリンを喫食し、前記基準1に従って各マーガリンの風味を全パネルの総意で評価した。結果を表10に示す。
4名のパネルが、加熱酸化処理されていない、又は20~70時間加熱酸化処理したHYA-50を含む試験例7で調製した各実施例のマーガリン及び試験例7で調製した対照例のマーガリンを喫食し、前記基準1に従って各マーガリンの風味を全パネルの総意で評価した。結果を表10に示す。
酸化処理された酸化処理物を含むマーガリンは、酸化処理物を含まないマーガリンよりも甘い香り、甘い味、及び味の厚みが強いことが確認された。
Claims (9)
- 10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸若しくはその誘導体、又はそれらの塩の酸化処理物を有効成分とする、水添臭付与剤。
- 前記脂肪酸が10-ヒドロキシ-12-オクタデセン酸を含む、請求項1に記載された水添臭付与剤。
- 前記酸化処理が加熱酸化処理である、請求項1に記載された水添臭付与剤。
- 前記酸化処理物の過酸化物価が0.5以上200以下である、請求項1に記載された水添臭付与剤。
- 甘い風味、及び乳の風味からなる群から選ばれる少なくとも1つの風味を付与する、請求項1~4のいずれか1項に記載された水添臭付与剤。
- 10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸若しくはその誘導体、又はそれらの塩を酸化処理する工程を含む、請求項1~4のいずれか1項に記載された水添臭付与剤の製造方法。
- 請求項1~4のいずれか1項に記載された水添臭付与剤を食品に添加する工程を含む、食品に水添臭を付与する方法。
- 食品に水添臭を付与するための、10位にヒドロキシ基又はオキソ基を有する炭素数18の脂肪酸若しくはその誘導体、又はそれらの塩の酸化処理物の使用。
- 請求項1~4のいずれか1項に記載された水添臭付与剤を含む食品。
