Abstract
本発明は、冷凍・保存期間における氷結晶の増大や成長が抑制された、滑らかな食感を有するアイスクリーム様乳化組成物を提供することを目的とするものであり、水、油脂及びサイクロデキストリン、ならびに、トレハロース及びデキストリンを含むアイスクリーム様乳化組成物に関する。
Description
本発明は、水と油脂及びサイクロデキストリン、ならびに、トレハロース、及びデキストリンを含むアイスクリーム様乳化組成物に関するものである。
アイスクリームは、牛乳、生クリーム、卵黄等の原料を攪拌・混合して冷凍して得られる氷菓であり、老若男女問わず人気を博している。
一方、アイスクリームには乳や卵が含まれるために、それらの原料に対しアレルギーを有する人はアイスクリームを食すことができない。そのため、乳や卵に対しアレルギーを有する人でも食すことが可能な、乳や卵を含まないアイスクリーム様組成物が開発・報告されている。これらは、乳や卵等のタンパク質を実質的に含まず、水と油脂及びサイクロデキストリンを含む水中油型エマルジョンを含んでなる組成物であり(以下、「アイスクリーム様乳化組成物」と記載する)、特許文献1には、水、油、サイクロデキストリン、糖を含有する水中油型エマルジョンを含むアイスクリームが開示されている。また、乳タンパク質を含有しないことを特徴とするアイスクリーム類としては、特許文献2に、バターオイル、パーム油、糖類、デキストリンを含むアイスクリーム類が記載されている。
ところで、アイスクリームの滑らかな食感には、アイスクリーム中の氷結晶の量、サイズ、形状が大きな影響を与えているとされる(非特許文献1)。
一般的に、トレハロースの水溶液は凍らせると、砂糖水溶液に比べて、小さく丸い形の氷結晶を形成し、また氷結晶の成長を抑制するため、氷の粒は小さく、キメも細かくなることが知られている(非特許文献2)。特許文献3には、トレハロ-スを0.3~3重量%含有することを特徴とする冷菓類が記載され、ヤシ油、脱脂粉乳、砂糖、水を含むラクトアイスにおいて砂糖の一部をトレハロ-スに代えることによって、口溶けや滑らかさといった物性が向上することが記載されている。
また、アイスクリーム等の冷菓に特定の澱粉分解物を使用することで、クリーミーな食感を付与したり、乳脂肪に由来するコク味を強化できることが知られており(特許文献4)、上述の特許文献2では、タンパク質に代わりアイスクリーム類のボディ感を付与するためにデキストリンを用いることが記載されている。

本発明者らは、乳や卵等のタンパク質を実質的に含まず、水中油型エマルジョンを含んでなるアイスクリーム様乳化組成物は冷凍され、流通、販売等の保存過程において、時間の経過とともに次第に氷結晶が増大、成長し、ザラザラもしくはジャリジャリとした食感の低下をもたらすことを見出した。
本発明者らはこの課題を解決すべく、上述の氷結晶の形成に影響を及ぼすことが知られているトレハロース、又は、アイスクリーム等のコク味やボディ感に影響を及ぼすことが知られているデキストリンを添加してアイスクリーム様乳化組成物を調製してみたが、やはり保存期間において氷結晶が増大、成長し食感の低下が認められた。
そこで、本発明は、冷凍・保存期間における氷結晶の増大や成長が抑制された、滑らかな食感を有するアイスクリーム様乳化組成物を提供することを目的とする。
本発明者らは、上記課題を解決すべく鋭意検討した結果、トレハロース、及びデキストリンを配合して調製されたアイスクリーム様乳化組成物においては、冷凍・保存期間における氷結晶の増大・成長が抑制され、ザラザラもしくはジャリジャリとした食感が抑制された滑らかな良好な食感を達成できることを見出し、本発明を完成するに至った。
本発明は、これらの新規知見に基づくものであり、以下の発明を包含する。
[1] 水、油脂及びサイクロデキストリン、ならびに、トレハロース及びデキストリンを含むアイスクリーム様乳化組成物。
[2] タンパク質を実質的に含まない、[1]のアイスクリーム様乳化組成物。

本発明は、冷凍・保存期間における氷結晶の増大や成長が抑制された、滑らかな食感を有するアイスクリーム様乳化組成物を提供することができる。
本発明は、水、油脂及びサイクロデキストリン、ならびに、トレハロース及びデキストリンを含むアイスクリーム様乳化組成物に関するものである。
本発明において「アイスクリーム様乳化組成物」とは、アイスクリームとは異なり原材料に、乳、卵等のタンパク質を含まないものの、水と油脂とサイクロデキストリンを含む水中油型エマルジョンを含んでなる乳化状の組成物を冷凍して得られる、アイスクリームと同等、又は類似する物性を有する組成物を意味する。さらに、本発明のアイスクリーム様乳化組成物は、冷凍時及び/又は冷凍保存時に生成される氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持することができるために、ザラザラもしくはジャリジャリとした食感を抑制し、滑らかな良好な食感を有するアイスクリーム様の物性を維持することができる。
本発明において「油脂」とは、食用に供される動植物性油脂(食用油とも呼ばれる場合がある)を意味し、アイスクリーム、特に、ラクトアイスやアイスミルクにおいて一般的に使用されるものを利用することができる。このような油脂としては、10℃における固体脂含有量(SFC)が0%~35%、好ましくは0%~30%、より好ましくは0%~25%のものである。当該油脂は、好ましくは20℃におけるSFCが0%~25%、好ましくは0%~20%、より好ましくは0%~15%のものである。また、当該油脂は、融点が20℃以上、23℃以上、25℃以上、27℃以上、30℃以上、又は35℃以上の範囲にあるものが好ましい。融点の上限は特に限定されないが、例えば、50℃以下、45℃以下、又は40℃以下とすることができる。あるいは、当該油脂は、凝固点が12℃以下、6℃以下、4℃以下、0℃以下、-3℃以下、-5℃以下、-7℃以下、-10℃以下、又は-15℃以下の範囲にあるものが好ましい。凝固点の下限は特に限定されないが、例えば、-25℃以上、又は-20℃以上とすることができる。本発明において利用可能な油脂としては、食用植物油脂が好ましく、例えば、キャノーラ油、菜種白絞油、大豆油、コーン油、綿実油、落花生油、ゴマ油、米油、米糠油、ツバキ油、ベニバナ油、オリーブ油、アマニ油、シソ油、エゴマ油、ヒマワリ油、パーム油、茶油、ヤシ油、アボガド油、ククイナッツ油、グレープシード油、ココアバター、ココナッツ油、小麦胚芽油、アーモンド油、月見草油、ひまし油、ヘーゼルナッツ油、マカダミアナッツ油、ローズヒップ油、ブドウ油等を挙げることができる(これらに限定はされない)。また、食用動物油脂としては、アレルギー物質(例えば、特定原材料7品目及び特定原材料に準ずるもの21品目より選択される一又は複数の物質)が含まれていないものや、除去されたものが好ましい。油脂はいずれか単独で用いてもよいし、異なる油脂を組み合わせて用いてもよい。
本発明のアイスクリーム様乳化組成物は、油脂を任意の量で含むことができ、例えば、1重量%以上、好ましくは2重量%以上、例えば3重量%以上、4重量%以上、より好ましくは5重量%以上、例えば6重量%以上、7重量%以上、8重量%以上、9重量%以上、10重量%以上の量にて含めることができる。含める油脂の量の上限は50重量%以下、例えば45重量%以下、好ましくは40重量%以下、例えば35重量%以下、30重量%以下、25重量%以下、より好ましくは20重量%以下の量にて含めることができる。本発明のアイスクリーム様乳化組成物における油脂の含量の範囲は前記上限及び下限の数値よりそれぞれ選択される2つの数値を用いて表すことができる。例えば、本発明のアイスクリーム様乳化組成物には油脂を1重量%~50重量%、好ましくは2重量%~40重量%、より好ましくは5重量%~20重量%の範囲より適宜選択される量にて含めることができる。油脂の量が1重量%よりも少ないと乳化が不十分となり、冷凍してアイスクリーム様の食感が得られない場合があり、一方、油脂の量が50重量%よりも多い場合には風味を損なう場合がある。
本発明のアイスクリーム様乳化組成物において、水は油脂を乳化してサイクロデキストリンと共に水中油型エマルジョン形成することが可能な任意の量で含むことができ、例えば、アイスクリーム様乳化組成物中に水を、40重量%以上、例えば45重量%以上、50重量%以上、55重量%以上、好ましくは60重量%以上、より好ましくは65重量%以上、例えば70重量%以上の量にて含めることができる。含める水の量の上限は、特に限定されないが、90重量%以下、例えば85重量%以下、好ましくは80重量%以下、より好ましくは75重量%の量にて含めることができる。本発明のアイスクリーム様乳化組成物における水の含量の範囲は前記上限及び下限の数値よりそれぞれ選択される2つの数値を用いて表すことができる。例えば、本発明のアイスクリーム様乳化組成物には水を40重量%~90重量%、好ましくは60重量%~80重量%、より好ましくは65重量%~75重量%の範囲より適宜選択される量にて含めることができる。
「サイクロデキストリン」は、ブドウ糖を構成単位とする環状無還元マルトオリゴ糖を意味し、ブドウ糖の数が6つのα-サイクロデキストリン、7つのβ-サイクロデキストリン、8つのγ-サイクロデキストリンが挙げられる。本発明においては、α-、β-、及びγ-サイクロデキストリン、ならびにそれらの任意の組み合わせを用いることができる。好ましくはα-サイクロデキストリンを使用する。α-サイクロデキストリンは水への溶解性が高く、ざらつきの少ないアイスクリーム様乳化組成物を得ることができる。
本発明のアイスクリーム様乳化組成物において、サイクロデキストリンは水中油型エマルジョンに乳化安定性を付与し、かつ冷凍してアイスクリームと同等、又は類似する物性を付与することが可能な量で含めることができる。例えば、アイスクリーム様乳化組成物中にサイクロデキストリンを、0.1重量%以上、好ましくは0.5重量%以上、例えば1重量%以上、より好ましくは1.5重量%以上、例えば2重量%又はそれ以上の量にて含めることができる。含めるサイクロデキストリンの量の上限は、5重量%以下、例えば4.5重量%以下、4重量%以下、3.5重量%以下、好ましくは3質量%以下、より好ましくは2.5重量%以下とすることができる。本発明のアイスクリーム様乳化組成物におけるサイクロデキストリンの含量の範囲は前記上限及び下限の数値よりそれぞれ選択される2つの数値を用いて表すことができる。例えば、本発明のアイスクリーム様乳化組成物にはサイクロデキストリンを、0.1重量%~5重量%、好ましくは0.5重量%~3重量%、より好ましくは1.5重量%~2.5重量%の範囲より適宜選択される量で含めることができる。サイクロデキストリンの量が0.1重量%よりも少ないと当該組成物の乳化安定性が不十分となる場合があり、一方、5重量%よりも多い場合には当該組成物の粘性が高くなりすぎる場合があり、いずれにおいても冷凍してアイスクリーム様の食感が得られない場合がある。
「トレハロース」は、飲食品において一般的に用いられるものを利用することができる。本発明のアイスクリーム様乳化組成物において、トレハロースは当該組成物の冷凍時及び/又は冷凍保存時に生成される氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持することが可能な量で含めることができる。例えば、アイスクリーム様乳化組成物中にトレハロースを、5重量%以上、例えば6重量%以上、7重量%以上、8重量%以上、9重量%以上、好ましくは10重量%以上、例えば11重量%以上、12重量%以上、13重量%以上、14重量%以上、より好ましくは15重量%又はそれ以上の量にて含めることができる。含めるトレハロースの量の上限は、30重量%以下、例えば25重量%以下、好ましくは20重量%以下とすることができる。本発明のアイスクリーム様乳化組成物におけるトレハロースの含量の範囲は前記上限及び下限の数値よりそれぞれ選択される2つの数値を用いて表すことができる。例えば、本発明のアイスクリーム様乳化組成物にはトレハロースを、5重量%~30重量%、好ましくは10重量%~20重量%、より好ましくは15重量%の範囲より適宜選択される量で含めることができる。トレハロースの量が5重量%よりも少ないと、アイスクリーム様乳化組成物の冷凍時及び/又は冷凍保存時に、氷結晶の増大・成長の抑制が不十分となる場合があり、氷結晶を小さいまま維持することができず、滑らかな良好な食感を有するアイスクリーム様の物性を実現することできない場合がある。一方、30重量%よりも多い場合には風味を損なう場合がある。
本発明において「デキストリン」とは、環状構造をとっていない任意の重合度のデキストリンを意味し、飲食品において一般的に用いられるものを利用することができる。デキストリンのデキストロース当量(DE)値は特に限定されないが、例えば40以下のものを利用することができる。より好ましくはDE値が、20以下、例えば18以下のデキストリンを利用することができる。DE値が20以下のデキストリンを用いることによって、冷凍時及び/又は冷凍保存時に生成される氷結晶の増大・成長をより抑制することができる。
本発明のアイスクリーム様乳化組成物において、デキストリンは当該組成物の冷凍時及び/又は冷凍保存時に生成される氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持することが可能な量で含めることができる。例えば、アイスクリーム様乳化組成物中にデキストリンを、1重量%以上、例えば2重量%以上、3重量%以上、4重量%以上、好ましくは5重量%以上、例えば6重量%以上、7重量%以上、8重量%以上、9重量%以上、より好ましくは10重量%以上の量にて含めることができる。含めるデキストリンの量の上限は、30重量%以下、例えば25重量%以下、好ましくは20重量%以下、より好ましくは15重量%以下とすることができる。本発明のアイスクリーム様乳化組成物におけるデキストリンの含量の範囲は前記上限及び下限の数値よりそれぞれ選択される2つの数値を用いて表すことができる。例えば、本発明のアイスクリーム様乳化組成物にはデキストリンを、1重量%~30重量%、好ましくは5重量%~20重量%、より好ましくは10重量%~15重量%の範囲より適宜選択される量で含めることができる。デキストリンの量が1重量%よりも少ないと、アイスクリーム様乳化組成物の冷凍時及び/又は冷凍保存時に、氷結晶の増大・成長の抑制が不十分となる場合があり、氷結晶を小さいまま維持することができず、滑らかな良好な食感を有するアイスクリーム様の物性を実現することできない場合がある。一方、30重量%よりも多い場合には風味を損なう場合がある。
本発明のアイスクリーム様乳化組成物において、トレハロースとデキストリンとは重量比にして、トレハロース:デキストリンが10~20:5~15となる範囲より選択される量で含めることができ、好ましくは15:10の量で含めることができる。トレハロースとデキストリンとを当該範囲の量で含めることでより良好に、冷凍時及び/又は冷凍保存時に生成される氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持することができる。
本発明のアイスクリーム様乳化組成物は、タンパク質を実質的に含まないものとすることができる。タンパク質は一般的に、疎水性アミノ酸残基と親水性アミノ酸残基とから構成され、その両親媒性の特性から乳化作用を有する。そのため、多くの乳化食品において、タンパク質は乳化剤としての機能を果たしている。アイスクリームでは、原料として含まれる乳や卵に含まれるタンパク質がこの機能を果たしている。一方、本発明においては、水と油脂とサイクロデキストリンを含む水中油型エマルジョンを含んでなり、乳化剤として機能するタンパク質を用いなくてもよい。したがって、本発明において「タンパク質を実質的に含まない」とは、本発明のアイスクリーム様乳化組成物においてタンパク質が乳化作用を発揮する態様で含まれないことを意味し、タンパク質が一切含まれないことを意図するものではない。好ましくは、本発明のアイスクリーム様乳化組成物1g当たりにおいて、特定原材料(アレルギー物質)等由来のタンパク質含量が10μg未満であることを意味し、さらに好ましくは本発明のアイスクリーム様乳化組成物において、卵や乳をはじめとするアレルギー物質(例えば、特定原材料7品目及び特定原材料に準ずるもの21品目より選択される一又は複数の物質)となるタンパク質が一切含まれないことを意味する。
本発明のアイスクリーム様乳化組成物にはさらに、水溶性ゲル化剤を含むことができる。本発明のアイスクリーム様乳化組成物は、水溶性ゲル化剤を含むことにより、優れた乳化安定性を得ることができる。
本発明において「水溶性ゲル化剤」とは、一般的に、水に溶解し、粘性を付与する物質(増粘剤、増粘安定剤、糊料等とも呼ばれる場合がある)を意味する。このような水溶性ゲル化剤としては増粘多糖類を用いることができ、例えば、カルボキシメチルセルロース、グルコマンナン、タマリンドガム、キサンタンガム、ιカラギーナン、ローカストビーンガム、λカラギーナン、κカラギーナン、ジェランガム、アルギン酸ナトリウム、グアーガム等を挙げることができる。水溶性ゲル化剤はいずれか単独で用いてもよいし、異なる水溶性ゲル化剤を組み合わせて用いてもよい。より好ましくは、水溶性ゲル化剤はカルボキシメチルセルロース、グルコマンナン、タマリンドガム、キサンタンガム、ιカラギーナン、ローカストビーンガム、λカラギーナン、κカラギーナン、ジェランガム、アルギン酸ナトリウムであり、さらに好ましくは、水溶性ゲル化剤はカルボキシメチルセルロース、グルコマンナン、タマリンドガム、キサンタンガム、ιカラギーナン、ローカストビーンガムであり、特に好ましくは、水溶性ゲル化剤はカルボキシメチルセルロース、グルコマンナン、タマリンドガム、キサンタンガムである。
本発明のアイスクリーム様乳化組成物において、水溶性ゲル化剤は当該組成物に乳化安定性を付与し、かつ冷凍してアイスクリームと同等、又は類似する物性を付与することが可能な量で含めることができる。例えば、アイスクリーム様乳化組成物中に水溶性ゲル化剤を、0.01重量%以上、好ましくは0.05重量%以上、より好ましくは0.1重量%以上、例えば0.15質量%以上、の量にて含めることができる。含める水溶性ゲル化剤の量の上限は、特に限定されないが、5重量%以下、好ましくは2重量%以下、より好ましくは1重量%以下、さらに好ましくは0.4重量%以下とすることができる。本発明のアイスクリーム様乳化組成物における水溶性ゲル化剤の含量の範囲は前記上限及び下限の数値よりそれぞれ選択される2つの数値を用いて表すことができる。例えば、本発明のアイスクリーム様乳化組成物には水溶性ゲル化剤を、0.01重量%~5重量%、好ましくは0.01重量%~2重量%、より好ましくは0.05重量%~0.4重量%の範囲より適宜選択される量で含めることができる。水溶性ゲル化剤の量が0.01重量%よりも少ないと当該組成物の乳化安定性が不十分となる場合があり、一方、5重量%よりも多い場合には当該組成物の粘性が高くなりすぎる場合があり、いずれにおいても冷凍してアイスクリーム様の食感が得られない場合がある。
本発明のアイスクリーム様乳化組成物には、上記成分に加えて、必要に応じてさらに、飲食品の製造において通常用いられている保存剤、防腐剤、酸化防止剤、着色剤、溶剤、溶解補助剤、等張化剤、矯味矯臭剤、pH調整剤、香料、甘味料、呈味成分、酸味料等のその他の成分を配合することができる。これらその他の成分の配合量は、本発明において所望される、アイスクリームと同等、又は類似する物性が妨げられず、冷凍時及び/又は冷凍保存時に生成される氷結晶の増大・成長を抑制することができる範囲で、適宜選択することができる。
本発明のアイスクリーム様乳化組成物は、水、油脂、サイクロデキストリン、トレハロース、及び、デキストリン、ならびに必要に応じて、水溶性ゲル化剤、ならびにその他の成分を混合、攪拌し、得られた乳化組成物を冷凍することにより製造することができる。各成分は全て一緒に混合、攪拌してもよいし、各成分を別々にもしくは任意の組み合わせで順次添加して(順序は問わない)混合、攪拌してもよい。混合、攪拌して得られた乳化組成物は、加熱殺菌処理等に付すことができる。得られたアイスクリーム様乳化組成物は、適当な容器に充填された後、必要に応じて-3℃~-10℃のフリージング工程(水分の凍結と空気の混入を行う工程)を経て、-10℃~-30℃にて冷凍し、凍結させる。冷凍した乳化組成物は、-3℃~-30℃にて保存及び提供することができる。
本発明はまた、本発明のアイスクリーム様乳化組成物を製造するためのキットに関する。キットには、油脂、サイクロデキストリン、トレハロース、及び、デキストリン、必要に応じて、水溶性ゲル化剤、さらに必要に応じてその他の成分や水、が含まれ、それらは個別に別々の容器に、又は任意の組み合わせで別々の容器に収容することができる。
キットに含まれる、油脂、サイクロデキストリン、トレハロース、及び、デキストリン、ならびに、水溶性ゲル化剤や、その他の成分は、粉末や顆粒等の固形の形態としてもよいし(必要に応じて賦形剤等を利用してもよい)、水溶液や分散液等の液体の形態としてもよい。各成分はその形態に応じて、容器に収容される前、又は収容された後に加熱殺菌処理等に付され、キットの構成要素とすることができる。
キットは上述の本発明のアイスクリーム様乳化組成物の製造方法にしたがって利用することができ、ボール等の容器に、水(キットのいずれかの成分が液体の形態である場合、それに含まれる水を利用することができる)、油脂、サイクロデキストリン、トレハロース、及び、デキストリン、必要に応じて、水溶性ゲル化剤、さらに必要に応じてその他の成分を加えて、ミキサーやブレンダー等を用いて混合、攪拌し、次いで、得られた乳化組成物を適当な容器に充填し、必要に応じて-3℃~-10℃のフリージング工程を経て、-10℃~-30℃にて冷凍、凍結させることによって、本発明のアイスクリーム様乳化組成物を得ることができる。
以下、本発明を実施例により、更に詳しく説明するが、本発明はこれらの実施例に限定されるものではない。

I.アイスクリーム様乳化組成物の作製1
1.実験方法
(1)アイスクリーム様乳化組成物の作製
以下の表1の組成にしたがって、各成分を添加、混合し、試験品A-Lのアイスクリーム様乳化組成物を作製した。油脂は食用植物油脂(パーム油)を使用した。各成分の混合は、ハンドブレンダーを用いて20,000rpmにて10分間攪拌して行った。得られた各組成物は以下の氷結晶の評価実験に用いた。なお、以下、表中の各成分の量は重量%にて示される。

(1)アイスクリーム様乳化組成物の作製
以下の表1の組成にしたがって、各成分を添加、混合し、試験品A-Lのアイスクリーム様乳化組成物を作製した。油脂は食用植物油脂(パーム油)を使用した。各成分の混合は、ハンドブレンダーを用いて20,000rpmにて10分間攪拌して行った。得られた各組成物は以下の氷結晶の評価実験に用いた。なお、以下、表中の各成分の量は重量%にて示される。

氷結晶の評価の評価は公知の手法(日本冷凍空調学会論文集 Trans.of the JSRAE Vol.25,No.1(2008)pp.29-33;日本冷凍空調学会論文集 Trans.of the JSRAE Vol.29,No.2(2012)pp.263-270)に基づいて行った。すなわち、スライドグラス(厚さ70μm)に、試験品A-Lの各組成物をそれぞれ2~3μL滴下してカバーグラスを被せ、1分間で-30℃まで冷凍して氷結晶を生成させた後、1分間で-5℃まで昇温し、そのまま-5℃で30分間保存した。保存開始から10分後、20分後、及び30分後の氷結晶の形態をデジタルカメラで撮影し、得られた写真から氷結晶の大きさを測定した。

通常、アイスクリーム中の氷結晶径が55μmを下回ると滑らかな組織となり、55μm以上だとザラザラとした粗い組織になることが報告されている(日本冷凍空調学会論文集 Trans.of the JSRAE Vol.25,No.1(2008)pp.29-33)。そこで、試験品A-Lについて、保存開始から30分後に測定された氷結晶の大きさが55μm以上のものが50%以上含まれる場合に「×」、55μm未満のものが50%以上含まれる場合に「〇」、さらに55μm未満のものが70%以上含まれる場合に「◎」と評価した。
2.結果
保存開始から10分後、20分後、及び30分後の試験品A-Lの各組成物の氷結晶の形態ならびに評価結果を表1及び図1に示す。

試験品C,E-LとA,B,Dの比較より、組成物中にトレハロースとデキストリンを両方含めることにより(試験品C,E-L)、氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持できることが確認された。
一方、トレハロースは含むがデキストリンは含まない場合(試験品B)や、デキストリンは含むがトレハロースは含まない場合(試験品D)には、氷結晶の増大・成長を十分に抑制することはできなかった。
試験品Cと比べてデキストリンの含量を減らした場合には(試験品F)、保存開始後の氷結晶の成長速度が、試験品Cと比べて早くなる傾向が認められた。
試験品Cと比べてトレハロースの含量を減らした場合には(試験品H)、保存開始直後の氷結晶のサイズが、試験品Cと比べて大きくなる傾向が認められた。
これらのことから、トレハロースは初期段階の氷結晶を小さくするのに作用し、デキストリンはその後の氷結晶の増大・成長を抑制するのに作用すると考えられる。これらの作用の相違に基づき、トレハロースとデキストリンを両方含めることにより、より効果的に、氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持できると考えられる。
試験品C,JとK,Lの比較より、デキストリンのDE値が比較的小さいほうが氷結晶の増大・成長をより抑制できることが確認された。組成物中に含めるデキストリンのDE値が4である場合(試験品J)及び18である場合(試験品C)には、DE値が22である場合(試験品L)及び40である場合(試験品K)と比べて、氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持できることが確認された。
試験品Cと比べて、デキストリン(試験品E)、トレハロース(試験品G)、油脂(試験品I)の含量をそれぞれ増やした場合においても、氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持できることが確認された。
以上の結果より、水、油脂、サイクロデキストリン等を含む乳化組成物に、トレハロース及びデキストリンを添加して冷凍することにより、組成物中の氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持することができ、氷結晶によるザラザラとした食感を抑制した、滑らかな良好な食感を有するアイスクリーム様乳化組成物が得られることが確認された。
II.アイスクリーム様乳化組成物の作製2
1.実験方法
(1)アイスクリーム様乳化組成物の作製・氷結晶の評価
以下の表2の組成にしたがって、各成分を添加、混合し、試験品M-Rのアイスクリーム様乳化組成物を作製した。油脂は上記とは異なる食用植物油脂(ヒマワリ油、キャノーラ油、米油)を使用した。各成分の混合、ならびに、氷結晶の評価は上記手法と同様に行った。なお、以下、表中の各成分の量は重量%にて示される。
1.実験方法
(1)アイスクリーム様乳化組成物の作製・氷結晶の評価
以下の表2の組成にしたがって、各成分を添加、混合し、試験品M-Rのアイスクリーム様乳化組成物を作製した。油脂は上記とは異なる食用植物油脂(ヒマワリ油、キャノーラ油、米油)を使用した。各成分の混合、ならびに、氷結晶の評価は上記手法と同様に行った。なお、以下、表中の各成分の量は重量%にて示される。
2.結果
保存開始から10分後、20分後、及び30分後の試験品M-Rの各組成物の氷結晶の形態ならびに評価結果を表2及び図2に示す。

試験品MとNの比較より、油脂としてヒマワリ油を含む組成物中にトレハロースとデキストリンを含めることにより(試験品N)、氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持できることが確認された。
また、試験品OとPの比較より、油脂としてキャノーラ油を含む組成物中にトレハロースとデキストリンを含めることにより(試験品P)、氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持できることが確認された。
また、試験品QとRの比較より、油脂として米油を含む組成物中にトレハロースとデキストリンを含めることにより(試験品R)、氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持できることが確認された。
以上の結果より、用いる油脂の種類に関わらず、水、油脂、サイクロデキストリン等を含む乳化組成物に、トレハロース及びデキストリンを添加して冷凍することにより、組成物中の氷結晶の増大・成長を抑制し、氷結晶を小さいまま維持することができることが確認された。
Claims (14)
- 水、油脂及びサイクロデキストリン、ならびに、トレハロース及びデキストリンを含むアイスクリーム様乳化組成物。
- タンパク質を実質的に含まない、請求項1に記載のアイスクリーム様乳化組成物。
- 油脂がキャノーラ油、菜種白絞油、大豆油、コーン油、綿実油、落花生油、ゴマ油、米油、米糠油、ツバキ油、ベニバナ油、オリーブ油、アマニ油、シソ油、エゴマ油、ヒマワリ油、パーム油、茶油、ヤシ油、アボガド油、ククイナッツ油、グレープシード油、ココアバター、ココナッツ油、小麦胚芽油、アーモンド油、月見草油、ひまし油、ヘーゼルナッツ油、マカダミアナッツ油、ローズヒップ油、ブドウ油からなる群から選択される一又は複数である、請求項1又は2に記載のアイスクリーム様乳化組成物。
- さらに、水溶性ゲル化剤を含む、請求項1~3のいずれか一項に記載のアイスクリーム様乳化組成物。
- サイクロデキストリンがα-サイクロデキストリンである、請求項4に記載のアイスクリーム様乳化組成物。
- 水溶性ゲル化剤がカルボキシメチルセルロース、グルコマンナン、タマリンドガム、キサンタンガム、ιカラギーナン、ローカストビーンガム、λカラギーナン、κカラギーナン、ジェランガム、アルギン酸塩、グアーガムからなる群から選択される一又は複数である、請求項4に記載のアイスクリーム様乳化組成物。
- デキストリンのDE値が20以下である、請求項1~6のいずれか一項に記載のアイスクリーム様乳化組成物。
- 水、油脂及びサイクロデキストリン、ならびに、トレハロース及びデキストリンを混合する工程を含む、アイスクリーム様乳化組成物の製造方法。
- さらに、水溶性ゲル化剤を混合する、請求項8に記載の製造方法。
- 水、油脂及びサイクロデキストリンを含む乳化組成物の、冷凍保存中における氷結晶の増殖又は成長を抑制する方法であって、当該組成物の製造において、水、油脂及びサイクロデキストリン、ならびに、トレハロース及びデキストリンを混合する工程を含む、方法。
- さらに、水溶性ゲル化剤を混合する、請求項10に記載の方法。
- 請求項8又は9に記載の製造方法で製造されたアイスクリーム様乳化組成物。
- 油脂、サイクロデキストリン、トレハロース、及び、デキストリンを含む、水、油脂及びサイクロデキストリン、ならびに、トレハロース及びデキストリンを含むアイスクリーム様乳化組成物を製造するためのキット。
- さらに、水溶性ゲル化剤を含む、請求項13に記載のキット。
