Abstract

본 발명은 초고압을 이용하여 탈각한 바지락살을 포함하는 바지락조미식품에 관한 것이다. 구체적으로 열 또는 화학물을 작용하여 바지락 단백질의 변성을 주는 방식이 아닌 물의 압력으로 껍질 외벽에 초고압을 가하여 내부의 속살과 껍질을 분리시키는 원리로 바지락 본연의 맛과 질을 보존한 바지락살을 포함하는 바지락 조미식품에 관한 것이다.
