Abstract
【課題】リン酸塩を含まない食品用歩留り向上剤、及びそれを用いた食品加工方法の提供。 【解決手段】 本発明の食品歩留り向上剤は、主成分、ゲル化剤、及び増量剤を含み、主成分として、重曹を50~65重量部、炭酸カリウムを8~15重量部からなり、ゲル化剤として、グルコマンナン又は蒟蒻粉を3~6重量部からなり、増量剤として澱粉を23~31重量部からなる。さらに、本発明の食品歩留り向上剤を用いた食品加工方法は、第1のステップとして、前記食品歩留り向上剤を水に溶かした水溶液に食品を混ぜ、次いで、第2のステップとして、食品を浸した上記水溶液を15~60分放置し、最終ステップとして、前記食品を油加熱加工することを特徴とする。
