クリームチーズは、クリーム単独、またはクリームと乳の混合物に乳酸菌を添加して発酵させ、生成した乳酸により乳を凝固させて得られる、非熟成タイプのやわらかいチーズである。クリームチーズは、乳酸菌由来の発酵風味およびさわやかな酸味を有することから、甘さとの相性が良く、ケーキ、パン、並びにデザートなどの製造の際の製菓用または製パン用の加工原料として使用される。
この乳酸菌による発酵は、上記の通り、酸による乳の凝固の他に、クリームチーズ特有の温和な酸臭を生成させるために必要である(非特許文献1)。また、特許文献1には、添加する乳酸菌スターターは、発酵至適温度が約40℃の高温菌(thermophilic starters)や、約25℃の中温菌(mesophilic starters)を使用する。具体的には、Lactococcus lactis subsp.lactis、Leuconostoc pseudomesenteroides、Lactococcus lactis subsp.cremoris、Lactococcus lactis subsp.lactis biovar diacetylactis、Leuconostoc mesenteroides subsp.cremorisなどがある、と記載されている。
さらに、クリームチーズは、乳酸菌による発酵の代わりに、乳酸やクエン酸を添加して乳を凝固させる方法も知られている。特許文献1には、乳酸やクエン酸を使用する場合は、食品添加物用に該当するものから、クリームチーズの風味、品質に応じて、使用すればよい、と記載されている。

クリームチーズ用の原料ミックス(原料乳ともいう)を殺菌処理し、乳酸菌を添加し、乳酸菌による発酵で乳を酸凝固させる方法においては、クリームチーズに由来する発酵風味を十分に感じることができ、クリームチーズとしての嗜好性も付与される。一方、発酵に要する時間は、一般的に8時間以上という長時間が必要であることから、生産効率が必ずしも良好とはいえなかった。
クリームチーズ用の原料ミックスを殺菌処理し、乳酸やクエン酸を添加し、乳を酸凝固させる方法においては、上記の乳酸菌による発酵よりは、短時間で酸凝固でき、生産効率には優れている。一方、この方法では、いわゆるクリームチーズを想起させる発酵風味は十分に感じることはできず、クリームチーズとしての嗜好性としては、十分に満足できるものではなかった。
クリームチーズの製造に関する上記の問題点に鑑み、発酵時間を短縮しつつも、十分な発酵風味を有するクリームチーズの製造方法を開発することが課題であった。
本発明者らは、上記の課題を解決すべく鋭意研究を重ねた結果、クリームチーズの製造方法において、原料ミックスを、有機酸の添加によりpH5~6まで調整し、その後、乳酸菌の発酵により酸凝固させることで、発酵時間を短縮しつつも、十分な発酵風味を有するクリームチーズとなることを見出した。そして、本発明者らは、これらの知見に基づき、さらに検討を進め、本発明を完成するに至った。
本発明のクリームチーズの製造方法で得られたクリームチーズは、発酵時間を短縮しつつも、十分な発酵風味を有するだけではなく、従来の乳酸菌で発酵するだけで製造されたクリームチーズと比較して、乳に由来する甘味を強く感じることができた。すなわち、本発明のクリームチーズの製造方法で製造したクリームチーズは、従来の乳酸菌の発酵により製造されたクリームチーズと比較して、発酵時間を短くしたにも関わらず、逆に嗜好性が高まった。一般にチーズの嗜好性を高めるためには、発酵時間を長くすることが必要であると考えられていたため、上記の本発明の奏する現象は驚くべきものであった。
したがって、本発明は、以下のとおりである。

本発明では、発酵開始時の原料ミックスのpHを、有機酸の添加によってpH5~6に調整することを特徴とする。pH調整した原料ミックスを、乳酸菌で発酵させると、従来法に比べ、発酵時間を短縮しつつも、十分な発酵風味を有するクリームチーズを提供することができた。さらに本発明により製造されたクリームチーズは、従来法により製造されたクリームチーズと比較して、乳に由来する甘味を強く感じることができた。
以下では、本発明を詳細に説明するが、本発明は、個々の形態には限定されない。
本発明において、「クリームチーズ」とは、乳及び乳製品の成分規格等に関する省令(昭和26年12月27日厚生省令第52号)、および公正競争規約で定めるナチュラルチーズの規格のうちいずれかに該当するものであって、一般的にクリームチーズと呼ばれるものをすべて包含するものとする。したがって、例えば、国際食品規格(Codex Standard)で規定されるクリームチーズ(CODEX STAN 275-1973)や、米国連邦規則で規定されるクリームチーズ(21CFR§133.133)などを包含する。

クリームチーズの製造方法は、例えば、下記の通りである。
原料として、牛乳、山羊乳、羊乳等の哺乳類から得られた生乳、脱脂乳、クリームなどの乳原料を用い、クリームチーズ用の原料ミックスとすることができる。クリームチーズ用の原料ミックスは、生乳および/または脱脂乳にクリームを加えて、乳脂肪の含量を、例えば、7~20重量%、7~18重量%、7~16重量%、7~14重量%、7~12重量%、8~20重量%、8~18重量%、8~16重量%、8~14重量%、8~12重量%、9~20重量%、9~18重量%、9~16重量%、9~14重量%、9~12重量%、10~20重量%、10~18重量%、10~16重量%、10~14重量%、10~12重量%に調整する。
原料として、牛乳、山羊乳、羊乳等の哺乳類から得られた生乳、脱脂乳、クリームなどの乳原料を用い、クリームチーズ用の原料ミックスとすることができる。クリームチーズ用の原料ミックスは、生乳および/または脱脂乳にクリームを加えて、乳脂肪の含量を、例えば、7~20重量%、7~18重量%、7~16重量%、7~14重量%、7~12重量%、8~20重量%、8~18重量%、8~16重量%、8~14重量%、8~12重量%、9~20重量%、9~18重量%、9~16重量%、9~14重量%、9~12重量%、10~20重量%、10~18重量%、10~16重量%、10~14重量%、10~12重量%に調整する。
クリームチーズ用の原料ミックスの乳脂肪の含量を7重量%以上とすることで、後述するクリームチーズのチーズカードとホエイを分離しやすくなり好ましい。また、クリームチーズ用の原料ミックスの乳脂肪の含量を20重量%以下とすることで、クリームチーズの風味および食感がくどくなく好ましい。したがって、かかる観点からは、乳脂肪の含量は、7~20重量%、8~20重量%、9~20重量%、または10~20重量%がより好ましい。
なお、濃厚で重みのある風味および食感のクリームチーズを得る場合には、クリームチーズ用の原料ミックスの乳脂肪の含量を、20重量%を超えて調整することもできる。このように調整する場合の上限は、油分の分離、保形性等の観点から、45重量%程度である。したがって、濃厚で重みのある風味および食感のクリームチーズを得る場合、乳脂肪の含量は、7~45重量%、8~40重量%、9~35重量%、または10~30重量%が好ましい。
クリームチーズ用の原料ミックスの殺菌方法としては、例えば、63℃で30分間、72~74℃で15分間以上、82~88℃で300~360秒間、95℃で300秒間、などの条件で加熱殺菌を行うことができるが、これらの記載に限られず、公知のチーズ製造における原料ミックスの殺菌方法を、目標とするクリームチーズの品質や風味によって選択することが可能である。また、必要に応じて、原料ミックスの加熱殺菌前に、均質機(例えば、HA4733 TYPE H-20-2(SANWA MACHINE CO.,INC)など)を使用して0~25MPaの均質化圧力で均質化処理を行なうこともできる。
クリームチーズ用の原料ミックスを殺菌し、冷却した後に、クリームチーズ用の原料ミックスを凝固させる。
本発明において、殺菌処理したクリームチーズ用の原料ミックスを酸により凝固させる方法として、発酵開始時の原料ミックスを弱酸性に調整し、乳酸菌の発酵を利用する。
本発明において、殺菌処理したクリームチーズ用の原料ミックスを酸により凝固させる方法として、発酵開始時の原料ミックスを弱酸性に調整し、乳酸菌の発酵を利用する。
添加する乳酸菌は、発酵至適温度が約40℃の高温菌、発酵至適温度が約25℃の中温菌を使用することが一般的である。例えば、ヘルベチカス菌(Lactobacillus helveticus)、ラクチス菌(Lactococcus lactis)、ジアセチルラクチス菌(Lactococcus lactis subsp. lactis biovar. diacetylactis)、クレモリス菌(Lactococcus lactis subsp. cremoris)を乳酸菌として使用することが一般的であるが、これらに限られず、乳(乳糖)を発酵できる乳酸菌であれば、目標とするクリームチーズの品質や風味によって選択することができる。
また、本発明において原料ミックスを弱酸性(pH5~6程度)に調整するために酸を用いる。本発明に用い得る酸は、飲食可能なものであれば、特に限定されない。例えば、乳酸、クエン酸、酢酸、リンゴ酸、酒石酸などの有機酸や、塩酸、炭酸、リン酸などの無機酸を用いることができる。pHを調整するために用いる酸としては、有機酸が好ましく、特に、食品であり、液体で取扱いしやすいという理由で、乳酸が好ましい。
凝固したクリームチーズ用の原料ミックスは、ホエイを分離することにより、チーズカードを得ることができる。ホエイの分離方法は、膜またはメッシュなどによる濾過、遠心力を利用した分離など、公知のチーズの製造で使用しているホエイを分離する方法を、目標とするクリームチーズの品質や風味によって選択すればよい。得られたチーズカードがクリームチーズである。
本発明の原料ミックスは、上記のクリームチーズの製造にて一般的に用いられているクリームチーズ用の原料ミックスをいうが、目標とするクリームチーズの品質や食感に応じて成分の調整をすることができる。
本発明では、クリームチーズ用の原料ミックスに有機酸を添加して、pHを調整する。調整するpHは、例えば、pH5~6、pH5.1~5.9、pH5.2~5.8、pH5.3~5.7、pH5.4~5.6、pH5.5~5.6である。ここで、原料ミックスのpHをpH6以下に調整することで、その後の乳酸菌による発酵時間の短縮が可能であり、好ましい。また、原料ミックスのpHを5以上とすることで、その後の乳酸菌による発酵で生成される発酵風味を十分に得ることができ、好ましい。
クリームチーズの原料ミックスに有機酸を添加して、pHを調整する際の、原料ミックスの温度は、原料ミックスの乳化が破壊され脂肪塊、および/または油滴が発生しなければ、特に制限はないが、例えば、10℃以下、0~10℃、0~9℃、0~8℃、0~7℃、0~6℃、0~5℃、0~4℃である。ここで、原料ミックスの温度が10℃以下であれば、衛生的に取り扱うことができるため、好ましい。
クリームチーズの原料ミックスに有機酸を添加して、pHを調整する際の、有機酸の投入時期および投入方法は、原料ミックスの乳化が破壊され脂肪塊、および/または油滴が発生しなければ、特に制限はない。10%乳酸溶液を有機酸として使用する場合には、例えば、1分間あたり原料ミックス全体の0.01~1重量%、0.02~0.9重量%、0.03~0.8重量%、0.04~0.7重量%、0.05~0.6重量%、0.06~0.5重量%、0.07~0.4重量%、0.08~0.3重量%、0.09~0.25重量%、0.1~0.2重量%を用いる。ここで、10%乳酸溶液を1分間あたり原料ミックスに添加する量が、原料ミックス全体の0.01重量%以上であれば、原料ミックスのpH調整を効率よく行えるため、好ましい。また、10%乳酸溶液を1分間あたり原料ミックスに添加する量が、原料ミックス全体の1重量%以下であれば、原料ミックスの乳化が破壊され脂肪塊、および/または油滴が発生しないため、好ましい。
クリームチーズの原料ミックスに有機酸を添加して、pHを調整する際の原料ミックスと有機酸とを混合する方法は、原料ミックスの乳化が破壊され脂肪塊、および/または油滴が発生しない範囲で公知の撹拌、混合の方法を使用することができる。
本発明では、有機酸を添加して、pH5~6に調整したクリームチーズ用の原料ミックスを乳酸菌によって発酵する。ここで、乳酸菌は、クリームチーズを製造できる公知の乳酸菌を使用することができ、市販の乳酸菌も使用することができる。乳酸菌の添加は、殺菌処理済みの原料ミックスに対し、上記のpH調整を行う前、上記のpH調整のための有機酸の添加と同時、上記のpH調整の最中、または上記のpH調整後であってもよい。いずれの場合も、pHを調整した後に乳酸菌による発酵が行われる。
また、本発明のクリームチーズの製造方法における、乳酸菌による発酵を終了するpHは、例えば、pH3~4.9、pH3.5~4.9、pH3.7~4.9、pH3.9~4.9、pH4~4.9、pH4.1~4.9、pH4.2~4.9、pH4.3~4.9、pH4.4~4.9、pH4.5~4.9であり、目標とするクリームチーズの品質や風味によって選択することができる。ここで、凝固した時のpHが3以上であれば、クリームチーズの酸味が強くなく、好ましい。また、凝固した時のpHが5以下であれば、十分に酸による凝固がなされており、後述するホエイとの分離が容易であり、好ましい。
本発明のクリームチーズの製造方法では、従来のクリームチーズ用の原料ミックスに乳酸菌を添加するだけの場合と比較して、発酵時間が短縮されることが特徴である。例えば、クリームチーズ用の原料ミックスに有機酸を添加して、pH5.6に調整した後に、pH4.8まで乳酸菌による発酵をした場合(所要時間6.3時間)、従来のクリームチーズ用の原料ミックスに乳酸菌を添加する場合(所要時間8.4時間)と比較して、その発酵にかかる所用時間として、2時間以上短縮(約25%もの発酵にかかる所用時間の短縮)が実現できた。すなわち、従来の方法で3回分の発酵に要する時間において、本発明のクリームチーズの製造方法では4回分の発酵が可能となる。これは、工場などでの大規模な生産においては、大きな生産効率の改善につながる。
本発明のクリームチーズの製造方法で得られたクリームチーズは、従来のクリームチーズ用の原料ミックスに乳酸菌を添加して調製するクリームチーズと比較して、クリームチーズを想起させる発酵風味が同等であった。これにより、本発明のクリームチーズの製造方法は、従来の方法と比較して、同じ発酵風味のクリームチーズを生産する上で、より生産効率の高い優れた製造方法であることがわかる。
さらに、驚くことに、本発明のクリームチーズの製造方法で得られたクリームチーズは、従来のクリームチーズ用の原料ミックスに乳酸菌を添加して調製するクリームチーズと比較して、乳由来の甘味が強く感じられ、クリームチーズ全体として嗜好性が高まった。これにより、本発明のクリームチーズの製造方法は、従来の方法と比較して、同じ発酵風味のクリームチーズを生産する上で、より生産効率の高い優れた製造方法であるだけではなく、乳由来の甘味が強く嗜好性の高いクリームチーズの製造方法であることがわかる。
本発明のクリームチーズの製造方法は、本発明の効果である、クリームチーズの発酵風味を維持したまま、発酵時間を短縮することが可能であるかぎり、本発明のクリームチーズの製造途中での、新たな製造工程を付加、新たな食品原料・食品添加物の添加もできる。また、本発明のクリームチーズの製造方法で得られたクリームチーズは、その後に加熱し、均質化をするなどの新たな工程の付加、製菓や製パンなどへの新たな加工もできる。
例えば、本発明のクリームチーズの製造方法において、最終的なクリームチーズが滑らかな食感で離水が少なく、このクリームチーズを原料にチーズケーキにした場合においても、組織の縮みや沈みといったボリュームの低下が起こらず、良好な食感とするために、クリームチーズ中の多糖類、とくに乳酸菌由来の多糖類を3~200μg/mL、3~150μg/mL、3~100μg/mL、3~80μg/mL、3~60μg/mL、3~50μg/mL、3~40μg/mL、3~30μg/mL、3~25μg/mL、3~20μg/mL、3~15μg/mL含有するよう、乳酸菌由来の多糖類を生成する乳酸菌を使用することができる。ここでいう、乳酸菌由来の多糖類とは、乳酸菌の発酵(代謝)により生成された多糖類である。
例えば、発酵中に多糖類を生成する乳酸菌として、ラクトバチルス・デルブリュッキー・サブスピーシーズ・ブルガリクス(Lactobacillus delbrueckii subsp. bulgaricus)(以下、ブルガリア菌という)OLL1247株(受託番号:NITE BP-01814)(以下、ブルガリア菌OLL1247株という)、またはラクトバチラス・デルブルッキー・サブスピーシス・ブルガリクス(Lactobacillus delbrueckii ssp. bulgaricus)OLL1073R-1株(受託番号:FERM BP-10741)(以下、ブルガリア菌OLL1073R-1株という)、ストレプトコッカス・サーモフィラス(Streptococcus thermophilus)(以下、サーモフィラス菌という)OLS3618株(受託番号:NITE BP-01815)(以下、サーモフィラス菌OLS3618株という)、またはストレプトコッカス・サーモフィラス OLS3078株(受託番号:NITE BP-01697)(以下、サーモフィラス菌OLS3078株という)などを単独で使用することができる。
また、例えば、ブルガリア菌とサーモフィラス菌の組み合わせとして、ブルガリア菌OLL1247株とサーモフィラス菌OLS3618株の組み合わせ、ブルガリア菌OLL1247株とサーモフィラス菌OLS3078株の組み合わせ、ブルガリア菌OLL1073R-1株とサーモフィラス菌OLS3078株の組み合わせ、などを使用することができる。なお、本発明のクリームチーズの製造方法で得られたクリームチーズの乳酸菌由来の多糖の含量は、公知のフェノール・硫酸法にて測定できる。

本発明のクリームチーズの製造方法において、目標とするクリームチーズの発酵風味の強さに応じて、発酵風味を生成する適当な乳酸菌の菌株を選択できる。発酵風味は、実際にクリームチーズを食べた時の風味をもとに行う官能評価のほか、ジアセチルを指標物質として、クリームチーズ中のジアセチル含量で評価することができる。クリームチーズ中のジアセチルの含有量は、発酵風味の強いクリームチーズとするには、例えば、1~20ppm、2~19ppm、3~18ppm、4~17ppm、5~16ppm、5~15ppmである。
本発明のクリームチーズの製造方法で得られたクリームチーズは、その後の加熱し、均質化処理をして、加熱処理したクリームチーズとすることで、滑らかな食感で離水が少なく、このクリームチーズを原料にチーズケーキにした場合においても、組織の縮みや沈みといったボリュームの低下が起こらず、良好な食感にすることができる。ここで加熱の温度は、本発明のクリームチーズの効果が損なわれない限り、特に制限はないが、例えば60~100℃、65~95℃、70~90℃、75~85℃、77℃~83℃、78℃~82℃である。また、加熱の保持時間は10~90分間、15~60分間、20~40分間、25~35分間である。好ましくは、70~90℃で20~40分間の加熱であり、とくに好ましくは、78~82℃で25~35分間の加熱である。
本発明のクリームチーズの製造方法で得られたクリームチーズを、その後に加熱処理するために均質化の条件は、均質機を使用する場合の均質化圧は、例えば、5~50MPa、6~40MPa、7~35MPa、10~33MPa、12~31MPa、15~30MPa、15~25MPaである。本発明のクリームチーズの製造方法で得られたクリームチーズの均質化圧が5MPa以上であれば、本発明の効果が得られるため、好ましい。また、本発明のクリームチーズの製造方法で得られたクリームチーズクリームチーズの均質化圧が50MPa以下であれば、過剰なせん断による本発明の効果が失われることがないため、好ましい。均質機としては、当該分野において用いられる一般的なものを用いることができ、具体的な均質機の例としては、HA4733 TYPE H-20-2(SANWA MACHINE CO.,INC)などが挙げられる。また、均質化を行う温度は、特に限定されないが、均質化の前の加熱処理の温度や、均質化後の処理を考慮し、例えば、約80℃で行われる。
本発明のクリームチーズの製造方法で得られたクリームチーズ(加熱処理したものも含む)は、製菓、製パン用の加工原料として使用することができる。例えば、焼成工程のあるスフレチーズケーキに加工することができる。スフレチーズケーキを作る場合、本発明のクリームチーズの製造方法で得られたクリームチーズ加熱処理したものも含む)の他に、白ワイン、牛乳、卵黄、卵白、グラニュー糖、バターを添加することができる。焼成の温度は、例えば、150~300℃、150~250℃、150~220℃、160~200℃、170~190℃である。また、焼成の保持時間は10~90分間、15~60分間、20~40分間、25~35分間である。好ましくは、160~200℃で20~40分間の焼成であり、とくに好ましくは、170~190℃で25~35分間の焼成である。
以下では、実施例を挙げて、本発明をさらに詳細に説明するが、本発明は、これにより限定されない。
[試験例1]
未殺菌の生乳(牛乳)80kgにクリーム20kgを加えて、乳脂肪の含量が15重量%になるよう調整し、クリームチーズ用の原料ミックスとした。この原料ミックスを95℃で60秒間保持して殺菌した後、75℃まで冷却してから均質化圧15MPaで均質処理した。殺菌処理した原料ミックスを37℃まで冷却し、乳酸菌スターターを添加し、4℃、7℃、10℃、15℃、25℃、35℃の6水準で撹拌しながら、10%乳酸を1分間あたり0.2kg(原料ミックスに対し、0.2重量%)ずつ、pH5.6になるまで添加した。観察結果は表1の通りである。

表1より、10%乳酸を4℃および7℃でのクリームチーズ用の原料ミックスに添加する場合、脂肪塊および/または油滴が発生することなくpHを調整することができた。
[実施例1]
未殺菌の生乳(牛乳)80kgにクリーム20kgを加えて、乳脂肪の含量が15重量%になるよう調整し、クリームチーズ用の原料ミックスとした。この原料ミックスを95℃で60秒間保持して殺菌した後、75℃まで冷却してから均質化圧15MPaで均質処理した。殺菌処理した原料ミックスを4℃まで冷却し、「明治ブルガリアヨーグルト」(株式会社明治製、日本)から分離したブルガリア菌とサーモフィラス菌を添加し、4℃で撹拌しながら、10%乳酸を1分間あたり0.2kg(原料ミックスに対し、0.2重量%)ずつ、pH5.6になるまで添加した。その後、37℃に加温し、原料ミックスのpHが4.8になるまで6.3時間の静置発酵をした。発酵した原料ミックスを撹拌しながら80℃まで加温した後、カードとホエイを分離して、実施例1のクリームチーズを得た。このクリームチーズを4℃まで冷却した。

[比較例1]

実施例1のクリームチーズ、および比較例1のクリームチーズを対象に、乳糖含量を測定した。また、実施例1のクリームチーズ、および比較例1のクリームチーズを対象に、「発酵風味」、「乳由来の良好甘味」の指標で評価した。「発酵風味」、「乳由来の良好な甘味」において、「○」は比較例1と比較して強い、「△」は比較例1と同等、「×」は比較例1と比較して弱いと判定した。結果を表2に示す。
実施例1のクリームチーズは、比較例1と比較して、乳糖含量がわずかに高いにも関わらず、乳由来の良好な甘味を十分に感じることができた。また、実施例1の発酵風味は、比較例1の発酵風味と同等であった。これにより、実施例1のクリームチーズは、比較例1のクリームチーズと比較して、発酵時間が短縮されたにも関わらず、同等の発酵風味があり、かつ、乳由来の甘味が強く嗜好性の高いクリームチーズであることがわかった。
Claims (7)
- 原料ミックスを乳酸菌の発酵により酸凝固させるクリームチーズの製造方法であって、発酵開始時の原料ミックスのpHを、酸の添加によってpH5~6に調整する、前記製造方法。
- pHの調整を、10℃以下で行う、請求項1に記載のクリームチーズの製造方法。
- 酸凝固が、pH3~4.9まで乳酸菌を発酵させることで行われる、請求項1または2に記載のクリームチーズの製造方法。
- 酸が、有機酸である、請求項1~3のいずれか一項に記載のクリームチーズの製造方法。
- 有機酸が、乳酸である、請求項4に記載のクリームチーズの製造方法。
- 原料ミックスが、クリームチーズ用の原料ミックスである、請求項1~5のいずれか一項に記載のクリームチーズの製造方法。
- 請求項1~6のいずれか一項に記載のクリームチーズの製造方法によって製造されたクリームチーズ。
