Abstract

Pour obtenir des cristaux gras stables requis pour des additifs chocolatés, il est inévitable, dans les techniques classiques, d'employer une étape de transformation de cristal prolongée avec un contrôle de température ou un appareil spécial. Par conséquent, il était nécessaire de simplifier l'étape de transformation de cristal stable, et de réduire ainsi le coût de production. A cet effet, l'invention porte sur un additif chocolaté comprenant une graisse qui contient un triglycéride de type SUS (S représentant un résidu d'acide gras saturé ayant 16 à 24 atomes de carbone ; et U représentant un résidu d'acide gras insaturé ayant 18 atomes de carbone ou plus) et un acide gras saturé ayant de 4 à 12 atomes de carbone sous une quantité de 50 % en poids ou plus.
