Abstract

 気体状態の二酸化炭素を利用し、簡易に飲料水や食品の殺菌を行うことを目的とし、0.2~2MPa下において、二酸化炭素の微小気泡を、微生物又は酵素を含む食品に接触させ、これにより食品中の微生物の殺菌又は酵素の失活を行うことを特徴とする食品の処理方法を提供する。
