Abstract

流通している乾燥麦芽、発芽玄米、発芽大豆等いかなる種類の発芽穀物にも適用可能であり、短時間且つ簡便な処理操作で、発芽穀物中の有効成分を保持しつつ、劣化による異臭の発生を抑えるために、発芽穀物をマイクロ波加熱処理することによって発芽穀物中の酵素活性を低減する発芽穀物加工方法。
