Abstract

 高度不飽和脂肪酸(PUFA)及びこれを含有する脂質の製造方法、PUFAを含有する微生物菌体並びにそれらの利用方法を提供する。  アラキドン酸(ARA)及び/又はジホモ-γ-リノレン酸(DGLA)生産能を有する微生物を培養することを伴う、高度不飽和脂肪酸(PUFA)及びこれを含有する脂質の製造方法において、以下の(a)~(c)の工程:(a) 本培養開始後に、培地に有機酸を0.01~5w/v%添加する工程;(b) 本培養開始後に、培地のpHを培養有効範囲内で高めるよう制御する工程;及び(c) 本培養培地に、金属イオンの硫酸塩を0.01~0.5w/w%添加する工程;の1以上を含む、PUFA又はこれを含有する脂質の製造方法を提供する。
