Abstract

L'invention concerne un procédé amélioré consistant à couper en morceaux des tomates ou autres fruits ou légumes, avant de les soumettre à un processus de déshydratation, en particulier à un processus de déshydratation partielle. Le procédé selon l'invention consiste à effectuer dans chaque morceau une entaille longitudinale dans la peau extérieure et dans la partie de chair située le plus à l'extérieur, de sorte à faciliter le séchage. L'invention concerne également un appareil destiné à mettre en oeuvre ledit procédé. Dans cet appareil, les fruits et légumes sont placés dans des récipients appropriés, puis sont appuyés contre un ensemble de lames, cet ensemble étant constitué de lames destinées à couper en morceaux les fruits et légumes, et de lames destinées à entailler la partie située le plus à l'extérieur.
