Abstract
La invención se refiere al procedimiento de preparación de un polvo de queso para la reconstitución de un producto quesero, caracterizado por que comprende las siguientes etapas: - realización de una mezcla láctea (1), - adición del cuajo (2), coagulación y obtención de un coágulo, - corte del coágulo (3) y obtención de una mezcla quesera, - funcionalización (5) de la mezcla quesera mediante emulsificación, - secado (6) de la mezcla quesera funcionalizada y obtención de un polvo de queso (7). - la mezcla (8) de un componente líquido con el polvo de queso (7).
