Abstract
Proceso para producir helados que comprende una masa de preparación de helado que contiene leche y un elemento discreto de helado de agua en el que: a- la masa de preparación de helado que contiene leche esta en contacto con una solución de helado de agua que tiene un valor reométrico de más de aproximadamente 1,0 para hacer que la solución de helado de agua se adhiera a la masa de preparación de helado que contiene leche y b- la solución de helado de agua que se adhiere se enfría rápidamente a 15ºC o menos. Proceso en el que la superficie de la masa de preparación de helado contiene leche tiene una temperatura de menos de -5ºC antes de entrar en contacto con la solución de helado de agua. Preparación de helado que comprende un masa de preparación de helado que contiene leche y un elemento discreto de helado de helado de agua en la que el helado de agua es esencialmente no adherente y tiene una composición que, bajo la forma de una solución de helado de agua tiene un valor reométrico de más de aproximadamente 1,0.
