Abstract

Емульгувальна система в основному складається зі: а) сполук формули І: EMBED ISISServer (Формула І), у якій R1 означає вуглеводневу групу, і ненасичених лактилованих монодигліцеридів; або б) сполук формули І, у якій R1 означає вуглеводневу групу, і насичених моногліцеридів; або в) сполук формули І, у якій R1 означає вуглеводневу групу, і насичених моногліцеридів і ненасичених лактилованих. Як сполуку формули I емульгувальна система може включати пропіленглікольмоностеарат. Винахід належить також до замороженого харчового продукту, який виготовлений запропонованим способом з використанням емульгувальної системи, та належить до застосування емульгувальної системи для пригнічення росту кристалів в замороженому харчовому продукті.
