Description
The invention belongs to the wine industry and can be used for the production of sparkling wines.
16.10.2006).There is a known method of producing sparkling wine, which includes obtaining assemblages from wine materials, aging them, preparing a blend of wine materials, secondary fermentation and filtration to obtain fermented wine, preparing liqueur, adding dried (leaf) gold to the liqueur, bottling and mixing the fermented wine and liquor with dried (leaf) gold to a homogeneous mixture in bottles (see patent of Ukraine for utility model Mo 18185, IPC C120 1/06, publ. 10.16.2006).
The disadvantage of the known method is its insufficient productivity, due to the low speed of mixing fermented wine and liquor with dry gold (leaf) to obtain a homogeneous mixture, due to foaming in the bottles of the finished product, due to inconsistent temperature conditions when bottling fermented wine and liquor with dry gold ( gold leaf) in bottles. Another disadvantage of the known method is that the release of carbon dioxide bubbles from the finished product occurs too quickly, which reduces its organoleptic indicators.
A known method of sparkling wine production, accepted as the closest analogue, which includes obtaining assemblages from wine materials, their aging, preparation of blend from wine materials, secondary fermentation and filtration of wine materials (blended) to obtain fermented wine, preparation of liqueur, bottling of fermented wine with the addition of its composition of liquor and dry gold, (see the declaratory patent of Ukraine for the invention No. 49329, IPC C120 1/06, publ. 16.09.2002). According to the well-known method, after secondary fermentation, the fermented wine is kept at a temperature of minus 3-4 "С in thermoreservoirs for at least 24 hours, after which it is served for bottling. At the same time, before bottling the fermented wine, 100 leaves are immersed in the previously selected 10 liters of liquor of (dry-cast) metallic gold weighing 0.015 g each and mixed with a stirrer for 3-5 minutes. In this way, a liqueur with metallic gold in the amount of 0.005-0.075 g per 1000 ml of the produced product is obtained. Then the fermented wine is bottled, and when filling each bottle, add liqueur with metallic gold, and after bottling, stirring is carried out in each bottle of fermented wine with liqueur until a homogeneous mixture is obtained.
However, in the sparkling wine obtained by this method, carbon dioxide bubbles are released too quickly, which reduces its organoleptic indicators.
The disadvantages of the known method are the insufficient productivity of the method, due to the low speed of mixing after bottling the sparkling wine, due to the foaming of the finished product in the bottles, which is due to the lack of an identical temperature regime between the cooled fermented wine, which is poured into the bottles, and the liquor containing metallic gold , and low organoleptic indicators of sparkling wine, due to the difficulty of controlling the amount of liquor added to bottles.
It has been established that the addition of dry (metallic) gold to sparkling wine increases its sparkling properties, which have a more stable character. The carbon dioxide bubbles attach to the gold particles and the bubble release time slows down. Particles of dried gold are imperceptible when consumed and do not affect the taste of sparkling wine, do not enter into chemical reactions with other ingredients, as a catalyst contribute to the faster assimilation of the components of sparkling wine.
In addition, taking a limited amount of dried gold helps to increase the protective functions of the human body and improves the condition of its immune system.
However, the known method of producing sparkling wine can be improved to increase its productivity and improve the organoleptic indicators of the finished product.
The basis of the invention is the task of developing a method of producing sparkling wine by optimizing technological processes during its production and introducing a different number of ingredients and in a different sequence to its composition, which allows to increase the productivity of the method and improve the organoleptic indicators of the finished product.
To solve the given problem in the known method of sparkling wine production, which includes obtaining assemblages from wine materials, their aging, preparation of blend from wine materials, secondary fermentation and filtration of wine materials to obtain fermented wine, preparation of liqueur, bottling of fermented wine with the addition of liqueur to its composition and dry gold, according to the claimed invention, before bottling, the fermented wine is mixed with liquor, followed by cooling the obtained base mixture to a temperature of -2-2 "C, mixing and filtering, after which the part of the resulting mixture is separated into which dry gold is added at the rate of 0.0012-0.005 g per 1 liter of the finished product, because the filling is carried out at a temperature not higher than 2 "С, while the indicated part of the separated mixture is dosed into bottles at the rate of 2-10 95 of the volume of the bottle, after which the bottles are topped up base mixture to complete.
The use of the indicated technological mode of filling bottles with the obtained mixture allows, on the one hand, to improve the organoleptic properties of sparkling wine, and, on the other hand, to increase the productivity of the claimed method. In particular, the achievement of an identical temperature regime between the part of the separated mixture containing dry gold, which is poured into the bottles first, at the rate of 2-10 95 of the volume of the bottle, and the cooled base mixture, which is poured into the bottles until they are full, prevents intensive foaming in bottles of the finished product. At the same time, the optimization of the temperature regime maintained during bottling ensures the slowing down of the release of carbon dioxide bubbles from the finished product, which improves its aesthetic and organoleptic properties.
The technical result of the claimed sparkling wine production method is an increase in its productivity and an increase in the organoleptic indicators of the finished product.
The method of production of sparkling wine is carried out as follows.
The method of production of sparkling wine includes obtaining an assemblage from wine materials, that is, combining wine materials into large batches within the limits of one variety, and their aging. In the process of obtaining the assemblage, demetallization and pasting of wine materials is carried out. Processed assembled wine materials are sent to the preparation of blend. Before being transferred to secondary fermentation, the wine materials (couplage) are aged for at least 30 days.
Secondary fermentation is carried out at a temperature not higher than 15 "C. The duration of secondary fermentation of wine materials (blending) is 20-24 days. Then the wine materials (blending) are subjected to filtration, resulting in fermented wine. After the end of the secondary fermentation process, the fermented wine is cooled to minus 4 -5 7C for a maximum of 12 hours, and kept at this temperature for at least 45 hours.
The next technological operation - preparation of liqueur - takes place in parallel with the process of secondary fermentation. Processed assembled wine materials (from the blend selected for secondary fermentation), sucrose, and citric acid are used to prepare the liqueur. After aging the liqueur, the minimum period of which is 30 days, it is mixed with fermented wine to obtain the base mixture. Then the resulting base mixture is cooled
From to a temperature of -2 - 2 "C (from minus 2 "C to plus 2 "C), mix and filter. After that, separate part of the resulting mixture, into which dry gold is introduced at the rate of 0.0012-0.005 g per 1 liter of finished product. The mixture is poured at a temperature not higher than 2 "С, while the specified part of the separated mixture is dosed into bottles at the rate of 2-10 95 of the volume of the bottle, after which the bottles are topped up with the base mixture until they are full.
An example of implementation of the claimed method.
The method of production of sparkling wine, according to the claimed invention, was carried out by saturating processed assembled blended wine materials with carbon dioxide, by means of secondary fermentation, with the addition of syrup with sugar conditions (g/dm3) according to the brand of sparkling wine, according to the current DSTU 4807: 2007 "Sparkling wines".
Grapes for processing into wine materials were collected in areas where the production of wine materials with a sugar content of 170-200 g/dm3 and a titrated acidity of 6-10 g/dm3 is ensured. The production of must from grapes was carried out by separating the grape berry from the ridge and subsequent pressing on pneumatic presses. The resulting wort was aged at a temperature not higher than 18 "С with preliminary sulfation to 40 mg/dm3 at a pH of 3.2. For the production of wine materials for sparkling wine, the first fractions of wort were selected in the amount of no more than 60 dal from 1 ton of grapes.
After settling, the wort was decanted from the sediment and served for fermentation at a temperature of 14-187C. Fermentation was carried out on a pure culture of yeast of special races. The yeast strain was added to the wort in the amount of 1-395. After complete fermentation, the mass concentration of residual sugars in wine materials did not exceed 2 g/dm3. After that, the wort was decanted from the yeast sediments. Then such technological operations were carried out as obtaining the assemblage, that is, combining wine materials into large batches within the limits of one variety, and their aging. In the process of assemblage, demetalization and pasting of wine materials were carried out. The processed assembled wine materials were directed to the preparation of blends. Blends were aged for 30 days before transfer to secondary fermentation.
Secondary fermentation of wine materials (blending) was carried out periodically in akratophores.
Secondary fermentation of wine materials with a mass concentration of sugars of 22 g/dmu was carried out in a battery of acratophores at a temperature of 14.6 "C. The duration of secondary fermentation of wine materials was 24 days. During this time, 18.8 g/dmu of sugars were fermented and a pressure of in an akratophore of 320 kPa. Then the wine materials were subjected to filtration, resulting in fermented wine. After the end of the secondary fermentation process, the fermented wine was cooled to minus 4 "C for 10.5 hours, and kept at this temperature for 48 hours.
The next technological operation, which was carried out simultaneously with the process of secondary fermentation, is the preparation of liqueur. Processed assembled wine materials from the blended batch sent for secondary fermentation, sucrose, and citric acid were used to prepare the liqueur. Liquor conditions: the mass concentration of sugars was 55 g/100 smu, the volume fraction of ethyl alcohol was not normalized. Aging of the liqueur continued for 31 days.
After aging the liqueur, it was mixed with fermented wine in an akratophor to obtain the base mixture. Then the obtained base mixture was cooled to a temperature of -0.5 C (minus 0.5 C), mixed and filtered. After that, a part of the resulting mixture was separated, into which dry gold was added at the rate of 0.0012-0.005 g per 1 liter of the finished product. The obtained mixture was poured at a temperature of 1.5 "C (plus 1.5 "C), while the specified part of the separated mixture was dosed into bottles at the rate of 2-10 95 of the volume of the bottle, after which the bottles were topped up with the base mixture until full.
