Description
本發明概言之係關於嬰兒食品且具體而言係關於具有低濃度之在加工或包裝期間所產生之不欲副產物的嬰兒食品。
衆所周知食品加工可產生不欲副產物。舉例而言,當烘烤食品時,烘烤製程可導致產生不欲丙烯醯胺。或者,當食品(例如)在罐及瓶中經受烹調時,此可導致產生不欲呋喃。
呋喃與丙烯醯胺類似皆係食品在加工期間受熱時自然產生之物質。其不係作為成份添加至食物中之合成物質,而係由於加工而在食品中產生。
人們已證明高濃度呋喃具有遺傳毒性且證明在動物實驗中具有致癌性。
呋喃列示於衛生和人類服務部(Department of Health and Human Services)致癌物列表中,且根據在實驗室動物中於高度暴露下之研究被國際癌症研究署(International Agency for Research on Cancer)認為可能具有致癌性。因而,高濃度呋喃在食品中係不期望的。
呋喃可藉由熱加工包括多不飽和脂肪酸(PUFA)、抗壞血酸(維生素C)、β-胡蘿蔔素、糖及胺基酸之食物而產生。
因此,本發明目的係提供包含含量降低之不欲副產物的
嬰兒食品新系列。不欲副產物之含量可(例如)參照食品中呋喃濃度來量測。

由輔助食品所提供之每日攝入能量的總和為66.5%(691.7千卡)。每日攝入能量之剩餘33.5%(348.3千卡)係由乳品提供。此提供1040千卡之總每日攝入能量。
在pH7及pH4之含水模型系統中於121℃下熱處理25分鐘之後研究呋喃形成。結果示於圖2及3中。結果表明,在pH7下,於121℃下熱處理25分鐘之後PUFA之濃度顯示對呋喃形成之影響最大。
在pH 4下,於121℃下熱處理25分鐘之後抗壞血酸作為呋喃前體起著重要作用,但可以看出PUFA仍顯示對呋喃形成之影響最大。
實施兩個其他研究。相對於添加抗壞血酸及衍生自魚油之LC-PUFA,為研究呋喃形成之量實施第一個研究且結果示於圖4中。相對於用來加工食品之滅菌條件,為研究呋喃形成之濃度實施第二個研究且結果示於圖5及6中。在圖5中,展示關於包括胡蘿蔔之蔬菜食品之結果。在圖6中,展示關於包括鱈魚及混合蔬菜之可口食品之結果。可以看出,在根據本發明處理後每公斤食品中含有約2微克的作為副產物所產生之呋喃。
結果清楚地表明,魚油及維生素C之含量增加導致呋喃產生之含量增大。此外,與藉由超高溫(UHT)處理滅菌相比,在F0=100、F0=15及F0=8下藉由乾餾使食品滅菌導致食品中呋喃產生之含量明顯增大。(F0係衆所周知之無菌度標示-F0值係殺死梭菌屬肉毒毒素桿菌(clostridium botulinum
bacteria)所需時間之習知量度)。實際上,可清楚地看出,與傳統乾餾相比在正常滅菌條件下,超高溫(UHT)滅菌可最大程度地將呋喃形成減少到2.5至5分之一。此外,明顯地,儘管經放大之滅菌條件使得藉由乾餾所處理之產品中呋喃形成呈線性增加,但作為超高溫(UHT)處理之結果呋喃形成幾乎仍保持不變。
在本說明書中,已揭示本發明之典型較佳實施例,儘管使用特定術語,但該等術語僅以普通及闡述意義使用而非出於限制以下申請專利範圍中所闡述之本發明範圍之目的。顯然,借助於上述教示內容可對本發明實施多種修改和改變。因此,應理解,可在隨附申請專利範圍內以不同於所描述具體內容之方式實施本發明。

Claims (11)
- 一種嬰兒食品套組,其包括用於嬰兒發育第1、2、3或4(幼兒)階段之至少一種以蔬菜為主之產品及以水果為主之產品,其中用於第2階段嬰兒之嬰兒食品包含一或多種選自牛肉、小牛肉、雞肉、羔羊肉、豬肉、火雞肉、鴨肉及魚組成之群之肉類,其中該嬰兒食品套組經受超高溫(UHT)處理,及其中該套組中每種產品皆包含最少含量的在加工期間所產生之不欲副產物,其係如該套組中每種產品包含每公斤食品低於2.4微克呋喃所示。
- 如請求項1之嬰兒食品套組,其中該套組中每種產品皆包括每公斤食品2+/-0.2微克呋喃。

- 一種製造嬰兒食品之方法,其包括分別預烹調成份、使該等成份混合、使其經受超高溫(UHT)處理及無菌地填充包裝容器,其中該食品係以蔬菜為主之產品、以水果為主之產品或包含一或多種選自牛肉、小牛肉、雞肉、羔羊肉、豬肉、火雞肉、鴨肉、魚、蛋及甲殼類組成之群之肉類之食品,其中各產品包含每公斤食品低於6微克之呋喃。
