Description
本發明係關於一種蔬菜及/或水果飲料組合物。
由於生活環境的變化,現代日本人之飲食生活變得紊亂。尤其明顯的是,由於節食率之增加或偏食化、過度依賴於加工食品之原因而造成能量攝取過剩、食物纖維或礦物質攝取不足之營養攝取不均衡。如此之營養攝取不均衡,係生活習慣病之危險因素之一,營養攝取之合理化對於健康生活具非常重要之意義。現已明確充分攝取蔬菜或水果有利於糾正營養攝取不均衡,在我國(日本),於「21世紀締造國民健康運動(健康日本21)」中,將每天攝取350 g以上蔬菜(標準值292 g,平成9年(西元1997年)國民營養調查)設定為目標值。又,在美國,為防止生活習慣病,目前正在推行每天攝取5種以上蔬菜及3種以上水果(5+3運動)之運動。鑒於如此背景業者認為,為便於攝取而加工蔬菜或水果對於增進國民健康具有極其深遠之意義。
將蔬菜或果汁加工成汁液狀,對於便於攝取係有效之方法。然而,對於不喜歡蔬菜或水果的人而言,即使加工成汁液狀,青草之氣味或口味、黏糊糊之口感仍令人擔心,因而不便攝取。作為改善方法,例如目前已知有一種食品,其中有人注意到二醯基甘油對於蔬菜汁或果汁之青草氣味成分或苦味成分具有良好的親水性/疏水性平衡作用,且可減輕添加有二醯基甘油的蔬菜汁或果汁之青草氣味及苦味(專利文獻1)。
又,現亦報告有一種方法,其中藉由作為糖醇之一種之赤藻糖醇(erythritol)(專利文獻2)或作為寡糖之一種之α-鍵結半乳寡糖(galacto-oligosaccharide)(專利文獻3)而改善蔬菜汁或果汁之口味;但因該等成分具有甜味,故存在影響最終食品味道之問題。
另一方面,已知有一種藉由具有羧基之水溶性酸性多糖類物質來改善蔬菜汁或果汁之口味之方法(專利文獻4),但存在溶液具有極高黏度因而難以吸收之問題。
又,存在若對該等蔬菜及/或水果飲料組合物實施加熱殺菌處理則產生加熱異味之問題。

本發明係提供一種蔬菜及/或水果飲料組合物,其含有下列成分(A)、(B)及(C),且實施加熱殺菌處理。:(A)源自蔬菜及/或水果之固形物0.1~1.2質量%、(B)聚右旋糖、(C)水。
本發明係提供一種飲料,其含有蔬菜及/或水果,且可減輕青草氣味或者由於加熱殺菌處理所產生之加熱異味,因而易於飲用。
本發明者調製添加有蔬菜汁或果汁之飲料,且對其青草氣味、加熱殺菌處理後之加熱異味、美味及飲用簡易性進行各種研究時發現:除添加聚右旋糖以外,若將源自蔬菜或水果之固形物含量調整為一定範圍內,則因為草腥味及加熱殺菌處理後之加熱異味之減輕,所以其飲用簡易性顯著提昇。再者,此處所謂青草氣味,係指例如吸收蔬菜或水果中所含有之己醇等醇類或己醛等醛類、二硫化物類或苯酞類等物質時所感覺到之異味。
本發明之蔬菜及/或水果飲料中,可抑制其青草氣味以及加熱殺菌處理後之加熱異味,因而易於飲用,故可長時期連續飲用。又,因含有聚右旋糖,故可期待其具有調理腸胃之效果或改善便通之效果。
本發明之蔬菜及/或水果飲料組合物,通常含有具有青草氣味且難以飲用的蔬菜及/或水果之榨汁。至於通常具有青草氣味且難以飲用之蔬菜榨汁,可列舉:蕃茄、胡蘿蔔、菠菜、捲心菜、芽甘藍、椰菜(broccoli)、花椰菜(cauliflower)、芹菜(celery)、萵苣(lettuce)、香芹(parsley)、水芹、甘藍菜(kale)、及大豆等。同樣,作為通常具有青草氣味且難以飲用之水果榨汁,可列舉:甜瓜、西瓜、楊梅、奇異果、番石榴(guava)、及乾果李(prune)等。本發明中所使用之成分(A)係源自蔬菜及/或水果之固形物,其含量以乾燥質量計為0.1~1.2質量%,較好的是0.2~1.2質量%,更好的是0.5~1.2質量%。至於如此之蔬菜及水果,可列舉:蕃茄、胡蘿蔔、菠菜、捲心菜、芽甘藍、青花菜、花椰菜、芹菜、萵苣、香芹、水芹、甘藍菜、及大豆等蔬菜類,檸檬、葡萄柚、橙子、蘋果、葡萄、甜瓜、西瓜、楊梅、奇異果、番石榴、及乾果李等水果類。本發明中,含有一定量之源自該等蔬菜及/或水果之固形物。此處所謂固形物,係指分散於水溶液中之大小為833 μm(20網眼)以下之不溶物質,固形物量可根據下述方法進行測定。
即,使用20網眼之Tyler標準篩(篩眼開孔距833 μm),過濾溫度調節為25℃且將樣品充分攪拌成為均勻狀態者,將通過網眼所獲得之樣本進行攪拌,且使其均勻化後秤量10 g移入離心沈澱管中,且使用高速冷卻離心機(HITACHI himac CR20G),設定處理溫度為20℃、設定最大離心加速度為4×105
~5.2×105
[m/s2
]範圍內,離心30分鐘,測定保留粒子徑為1 μm(ADVANTEC No.5C,直徑90 mm)之濾紙質量,之後藉由將離心沈澱管離心後上清液中之固形物過濾而收集。最後,將殘留於離心沈澱管中之全部固形物進行水洗,最終將全部固形物收集於同一濾紙上再進行水洗,將該濾紙於60℃下乾燥1小時,之後測定其質量,樣本10 g中之(固形物量)=(乾燥後之濾紙質量)-(濾紙質量)。
通常,於含有較強青草氣味之蔬菜及/或水果榨汁之飲料中所含固形物量過少之情形時,由於青草氣味較強而難以飲用。另一方面,於固形物量過多之情形時,黏度變高並且加熱殺菌處理後之加熱異味變強因而難以飲用。
本發明之蔬菜及/或水果飲料組合物中之成分(A)之含量(乾燥質量),於通過20網眼Tyler標準篩(篩眼開孔距833 μm)之組合物中,較好的是0.1~1.2質量%,更好的是0.2~0.9質量%,更好的是0.21~0.85質量%,更好的是0.25~0.8質量%,尤其好的是0.3~0.6質量%。於具有青草氣味之蔬菜及/或水果榨汁中含有大量固形物之情形時,藉由以過濾或離心分離將固形物去除之操作,而調整固形物量。又,於具有青草氣味之蔬菜及/或水果榨汁中含有少量固形物或者幾乎不含有固形物之情形時,亦可藉由添加自其他蔬菜及/或水果榨汁中過濾或離心分離所得之固形物,而調整固形物量。
作為本發明中所用之聚右旋糖(B),可使用以平成15年(西元2003年)2月17日之食新發第0217002號厚生勞動省醫藥局食品保健部企畫課新開發食品保健對策室長通知之項1(「關於營養表示標準中之營養成分等之分析方法等」之一部分修正)之中所定義之能量換算係數0(kcal/g)之成分。
對於聚右旋糖(B)水溶液之黏度並無特別規定,例如較好的是,於低濃度下不產生凝膠化,又,水溶液不產生高黏度化。為製成易於攝取組合物之形態,較好的是,聚右旋糖(B)之1質量%水溶液於25℃下具有流動性。又,其1質量%水溶液之黏度,較好的是200 mPa.s以下,更好的是50 mPa.s以下,更好的是20 mPa.s以下,更好的是10 mPa.s以下,尤其好的是5 mPa.s。再者,使用B型黏度計,於25℃下,給旋轉子(轉子No.1)加上每分鐘60次之旋轉速度後測定其黏度。
就減輕青草氣味效果、美味及提昇飲用簡易性效果而言,本發明之蔬菜及/或水果飲料組合物中之成分(B)之含量,較好的是0.5~30質量%,更好的是1~20質量%,更好的是1~15質量%,更好的是1.1~12質量%,更好的是1.2~10質量%,更好的是1.3~8質量%,尤其好的是1.4~6質量%。
再者,根據食品之營養表示標準制度第2版(平成11年(西元1999年)7月1日發行,編輯財團法人日本健康/營養食品協會/營養食品部,第46頁~51頁)中所揭示之高速液體層析法(酵素-HPLC法)來定量測定聚右旋糖。
又,就飲用簡易性而言,本發明之蔬菜及/或水果飲料組合物中須含有成分(C)水,其含量,較好的是本發明之蔬菜及/或水果飲料組合物中之65質量%以上,更好的是80質量%以上,尤其好的是86~96質量%。
又,較好的是,於本發明之蔬菜及/或水果飲料組合物中進一步添加酸性多糖系水溶性食物纖維(D)。可藉由添加酸性多糖系水溶性食物纖維(D),而增強成分(B)之減輕青草氣味效果、美味及提高飲用簡易性效果。所謂酸性多糖系水溶性食物纖維(D),係指酸性多糖系食物纖維中之水溶性者。所謂酸性多糖系食物纖維(D),係指具有羧基、磺醯基、硫酸殘基等酸性基之食物纖維。若於1 mL本發明中所用之酸性多糖系水溶性食物纖維(D)1質量%水溶液中添加1 mL之0.02 mol/L硫酸鈉水溶液及1 mL之1質量%氯化十六烷基三甲基銨水溶液,則可確認有白色沈澱產生。
本發明中所用之酸性多糖系水溶性食物纖維(D),係根據食品營養表示標準制度第2版(平成11年(西元1999年)7月1日發行,編輯財團法人日本健康/營養食品協會/營養食品部,第46頁~51頁)中所揭示之氧-重量法進行定量測定。即,於特定條件下,經過一系列酵素處理後,自於約80質量%乙醇中沈澱之殘渣質量中減去非消化性蛋白質及灰分後再進行測定。
本發明中所用之酸性多糖系水溶性食物纖維(D),較好的是自植物、海藻或菌體等中經萃取、分解、提純步驟所獲得者。具體而言,可列舉:海藻酸(algin acid)、低分子化海藻酸、角叉菜膠(carrageenan)、褐藻糖膠(fucoidan)、紫菜聚糖膠(porphyran)、酸性洋菜(agaropectin)、果膠(pectin)、低分子果膠、阿拉伯樹膠、刺梧桐樹膠(Karaya gum)、結冷膠(gellan gum)、三仙膠(xanthan gum)以及該等之鹽類,該等可單獨添加1種或組合添加2種以上。作為鹽類,較好的是鹼金屬鹽,尤其好的是鈉鹽。該酸性多糖系水溶性食物纖維(D)與其他食物纖維相比,具有以下優異性質:可減輕加入具有青草氣味的蔬菜或水果之榨汁之飲料之青草氣味,且增進美味。
又,對於該酸性多糖系水溶性食物纖維(D)之水溶液黏度並無特別規定,例如較好的是,於低濃度下不產生凝膠化,又,水溶液不產生高黏度化。因此,為製成易於攝取飲料組合物之形態,較好的是,該酸性多糖系水溶性食物纖維(D)之1質量%水溶液於25℃下具有流動性。具體而言,其1質量%水溶液黏度,較好的是200 mPa.s以下,更好的是50 mPa.s以下,更好的是20 mPa.s以下,更好的是10 mPa.s以下,尤其好的是5 mPa.s。再者,使用B型黏度計,給旋轉子(轉子No.1)施加每分鐘60次之旋轉速度後測定其黏度。
就減輕青草氣味效果、美味及提高飲用簡易性效果而言,本發明之蔬菜及/或水果飲料組合物中之成分(D)之含量,較好的是0.5~30質量%,更好的是1~20質量%,更好的是1~15質量%,更好的是1.1~12質量%,更好的是1.2~10質量%,更好的是1.3~8質量%,尤其好的是1.4~6質量%。
於併用成分(B)與成分(D)而添加之情形時,就減輕青草氣味效果、美味及提高飲用簡易性效果而言,本發明之蔬菜及/或水果飲料組合物中成分(B)與成分(D)含量之合計,較好的是0.5~30質量%,更好的是1~20質量%,更好的是1~15質量%,更好的是1.1~12質量%,更好的是1.2~10質量%,更好的是1.3~8質量%,尤其好的是1.4~6質量%。
於本發明之蔬菜及/或水果飲料組合物中,除上述成分以外,可適當單獨添加或組合添加:其他食物纖維、糖類(例如澱粉、糊精、蔗糖等)、蛋白質(酪蛋白、大豆蛋白質、卵白等)、礦物質類(碳酸鈣、乳酸鉄等)、維他命類(維他命A、B1
、B2
、B1 2
、C等)、米、大麥、小麥、玉米、肉類、食用油、及調味料等。尤其好的是維他命C。
就組合物之保存穩定性及飲用簡易性而言,本發明之蔬菜及/或水果飲料組合物之pH值,較好的是pH 3~7,更好的是pH 3.5~5.5,尤其好的是3.8~4.6。
又,就飲用簡易性而言,本發明之蔬菜及/或水果飲料組合物,較好的是通過20網眼Tyler標準篩(篩眼開孔距833 μm)者,即組合物中所含有之固形物之大小為833 μm以下。
本發明之蔬菜及/或水果飲料組合物之加熱殺菌處理後之黏度,較好的是在300 mPa.s以下之範圍內,更好的是1~250 mPa.s,進而更好的是2~225 mPa.s,尤其好的是3~200 mPa.s。
於本發明之蔬菜及/或水果飲料組合物中,除源自蔬菜或水果之成分以外,亦可單獨添加或併用添加:抗氧化劑、香料、各種酯類、有機酸類、有機酸鹽類、無機酸類、無機酸鹽類、無機鹽類、色素類、乳化劑、保存料、調味料、pH調整劑、及品質穩定劑等添加劑。
至於無機酸類、無機酸鹽類,可列舉:磷酸、磷酸二鈉、甲基磷酸鈉、及聚磷酸鈉等。
本發明之蔬菜及/或水果飲料組合物,較好的是實施加熱殺菌處理之容器裝飲料。此處所使用之容器,可使用與普通飲料相同之以聚對苯二甲酸乙二醇酯為主要成分之成形容器(所謂PET瓶)、金屬罐、與金屬箔或塑膠薄膜複合之紙容器、瓶等具有通常之形態者。此處,所謂容器裝飲料,係指無需稀釋即可飲用者。
又,本發明之蔬菜及/或水果飲料組合物,例如填充於如金屬罐之容器中後,於可進行加熱殺菌之情形時,係以食品衛生法所規定之殺菌條件進行製造。對於如PET瓶、紙容器之無法進行蒸餾殺菌者,可採用以下方法:預先於與上述相同之殺菌條件下,例如以平板式熱交換器等進行高溫短時間殺菌後,冷卻至一定溫度後再填充於容器中。又,亦可於無菌條件下,於已填充之容器中添加其他成分後再進行填充。
製造聚右旋糖與蕃茄汁之合計量相同且系統內之固形物量不同之125 g飲料組合物。藉由離心分離或過濾而自富含固形物之蕃茄汁中去除固形物,藉以調整固形物量。再者,實施例1、比較例1、2、3之容器裝飲料,係通過20網眼Tyler標準篩’使用檸檬酸及檸檬酸三鈉調整pH值為pH 4.3後,於124℃、30秒之殺菌條件下實施UHT殺菌,且填充至容器中者。又,實施例1、比較例1、2、3中之任一例,均含有80%以上水分。

(固形物量測定法)預先準備恆溫於25℃、充分攪拌樣本且成為均勻狀態者。其次,使用20網眼Tyler標準篩進行過濾,使通過網眼所獲得之樣本均勻化,之後定量稱取10 g移入離心沈澱管內,使用高速冷卻離心機(HITACHI himac CR20G),設定條件為處理溫度20℃、最大離心加速度4×105
~5.2×105

]範圍,離心30分鐘。測定保留粒子徑為1 μm(ADVANTEC No.5C,直徑90 mm)之濾紙質量,之後藉由過濾離心沈澱管內之離心後之上清液中之固形物而收集。其次,將殘留於離心沈澱管中之全部固形物進行水洗。最終,將全部固形物收集於同一濾紙上進行水洗,且將該濾紙於60℃下乾燥1小時,之後測定其質量。樣本10 g中之(固形物量)=(乾燥後之濾紙質量)-(濾紙質量)。
請2~3名專家對實施例1及比較例1、2、3之含有蕃茄汁之飲料進行評價。
固形物量較多為1.3質量%之比較例1、3中,具有青草氣味及加熱異味。相對於此,固形物量為0.5質量%之比較例2中,可抑制加熱異味,但青草氣味稍強。相對於此,可確認:將固形物量設為0.5質量%而添加聚右旋糖之實施例1中,可減輕青草氣味、加熱異味,因而飲用簡易性明顯提高。
以與實施例1相同之方式,製造聚右旋糖與蕃茄汁之合計量相同且系統內之固形物量不同之125 g飲料組合物,請2~3名專家對飲料進行評價。再者,實施例2~4中之任一例均含有80%以上水分。
如表1所表明,可確認:實施例2~4之飲料中,亦可減輕青草氣味、加熱異味,因而飲用簡易性明顯提昇。
製造125 g之實施例5之飲料組合物,其處方為:蕃茄汁、成分(B)之聚右旋糖、及作為成分(D)之低分子化海藻酸鈉。藉由離心分離或過濾而自富含固形物之蕃茄汁中去除固形物,藉以調整固形物量。再者,實施例5之容器裝飲料,係通過20網眼Tyler標準篩,使用檸檬酸及檸檬酸三鈉調整pH值為pH 4.3,之後於124℃、30秒之殺菌條件下實施UHT殺菌,且填充於容器中者。又,實施例5含有80%以上水分。

請2~3名專家對實施例5之含有蕃茄汁之飲料進行評價。根據其結果可確認:實施例5中,亦減輕青草氣味、加熱異味,因而飲用簡易性明顯提昇。
Claims (3)
- 一種蔬菜及/或水果飲料組合物,其含有以下成分(A)、(B)及(C),且實施加熱殺菌處理:(A)源自蔬菜及/或水果且大小為833 μm以下之不溶性固形物 0.1~0.9質量%、(B)聚右旋糖0.5~15質量%、(C)水。
- 如請求項1之蔬菜飲料組合物,其係含有選自蕃茄、胡蘿蔔、甘藍菜、香芹、芹菜、捲心菜及菠菜中之1種或2種以上作為蔬菜之榨汁。
- 如請求項1或2之蔬菜及/或水果飲料組合物,其係容器裝飲料。
