Abstract

Yaklasik en az 10 dakika gevrekligini koruyan kaplanmis parmak patatesler. Parmak patatesler en az 0.1 mm nisasta bazli yüzey kaplamasina ve uzun bir bekletme süresinden sonra yaklasik en az 170 olan bit Yapi Degerine sahiptir. Bekletme süresi (1) bir isi lambasi altinda 4 dakika bekletme, (2) gida servisi paketleri içinde bir isi lambasi altinda 3 dakika bekletme ve (3) bir kapali tasima poseti içinde en az üç dakika olan bir ölçümdür. Standart kizarmis patatesler, firinda pisirildikten sonra özgün bir yapi saglayan özelliklere sahiptir. Kaplanmis firinda pisirilmis parmak patatesler yaklasik %28 ila yaklasik %50 kütle nem içerigine ve yaklasik %8 ila yaklasik %25 toplam yag içerigine sahiptir. Firinda pisirilmis parmak patatesleri hazirlamak için kullanilan standart kizarmis patatesler bir nisasta süspansiyonu ile kaplanir.
