Description

Изобретение относитс к производству искусственного пищевого продукта типа печени.
Известен способ приготовлени пищевого продукта, предусматривающий нагревание смеси белкового материала углевода и жира в присутствии воды 1.
Этим способом нельз получить продукт типа печени с ее запахом и стру турой,
Целью изобретени вл етс придание про 1укту запаха и структуры печени .
Это достигаетс тем, что в качает ве белкового материала.и углевода используют соответственно кровь и восстанавливающий сахар, а нагревание смеси ведут в автоклаве в течение 10-120 мин при давлении пара 0,35-17,5 кг/см, при этом указанные компоненты берут в следующем сооношении , вес. %: кровь 3-15, восстанавливающий сахар 3-10, жир 25-90, вода 30-60.
Кроме того, в смесь ввод т экстракт дрожжей в количестве, равном весу вЬсстанавливающего сахара.
Пример 1. .910 г обесцвеченного гов жьего сала, 910 г воды,
91 г высушенной крови и 45,5 г глюкозы смешивают, гомогенизируют, а затем нагревают в автоклаве в течение 15 мин при давлении ndpa 10,55 кг/см.По мере нагревани смесь приобретает запах и структуру печени . Затем материал разрезают на куски.
Пример 2. Процесс осуществл ют так же, как в примере 1, за исключениемтого , что добавл ют 45,5 г экстракта дрожжей. Продукт имеет более сильный запах, чем продукт, полученный по примеру 1.
Claims (2)
1. Способ приготовлени пищевого продукта, предусматривающий нагревание смеси белкового материала, углевода и жира в присутствии воды, отличающийс тем, что, с целью придани продукту запаха и структуры печени, в качестве белкового материала и углевода используют соответственно кровь и восстанавливающий сахар, а нагревание смеси ведут в автоклаве в течение 10-120 мин при давлении пара 0,35-
