Способ производства фруктово-ягодного формового мармелада, глазированного шоколадной глазурью, включает подготовку сырья к производству, приготовление сахаро-фруктово-ягодной смеси, которая содержит фруктово-ягодное пюре, сахар-песок, лактат натрия, измельченные возвратные отходы и водно-пектиновый раствор, соотношение пектина и воды в котором 1:15. Содержание сухих веществ в данной смеси 57-68%. Фруктово-ягодную смесь готовят на основе яблочного пюре, которое вносят в смесь в количестве 295-305 кг на тонну готовой продукции. Полученную сахаро-фруктово-ягодную смесь уваривают, затем приготавливают мармеладную массу путем смешивания уваренной сахаро-фруктово-ягодной смеси с кислотой. Приготовленную мармеладную массу формуют, подвергают студнеобразованию, формуют и покрывают шоколадной глазурью.
