Abstract

PURPOSE: To prepare a remolded fruit having appearance, aroma, tastes, etc. not inferior to those of good products (fruits), by crushing defective fruits occurred in processing fruit, adding a fruit juice and a gelling agent to the defective fruits, and remolding the mixture.
CONSTITUTION: Fruits after the pretreatment, e.g. peeling or coring, are crushed to leave fibers thereof intact as much as possible, and the resultant fruit juice and a gelling agent are added thereto. A seasoning agent, e.g. sugar, may be added if necessary. The resultant mixture is then molded in a mold having the shape of the raw fruit. The product is then canned or further frozen and refrigerated for eating.
