PURPOSE:To prepare dried AMAZAKE (sweet drink made from fermented rice) having excellent taste, flavor and solubility, keeping the shape of malted rice, by adjusting the water-content and viscosity of AMAZAKE within respective specific ranges in the drying of malted rice AMAZAKE and crushing the dried product to a specific particle size. CONSTITUTION:A malted rice AMAZAKE is mixed with sugars, salt, alcohol and taste component, the mixture is dried under reduced pressure and the dried product is crushed to granules of 1-5mm in size. In the above process, preferably the water-content of the mixture is 30-70wt.%, the viscosity is 500-10,000cps and the vacuum degree in the drying stage is 5-50Torr.
