Abstract

Prepn. of fruit juices comprises peeling fresh fruits, refrigerating them to a temp. low enough to convert them to hard, friable pieces, crushing the pieces and mixing the material so obtd., which corresponds to intact fruit cells, with ordinary fruit juice. The mixt. gives a fruit concentrate. The refrigeration may be carried out by immersing the fresh peeled fruit in a liq. N2 bath. Used in processing fruits for use as beverages, in water ices and in confectionery. The process is particularly applicable to oranges, lemons, grapefruit, mandarins, bergamot. The peeling should eliminate the layer between the skin and the pulp. The method gives a prodt. which has a much better taste than concentrates prepared by conventional means such as pressing and eliminating water. None of the natural flavour is lost.
