Abstract

PURPOSE: Fruits are cooled to the temperature range where ice crystals are formed and squeezed under a half-freezing or half-melting state, whereby a high-quality and high-concentration juice is obtained in high yield and simultaneously 2 or more kinds of fruit juice different in concentration and quality are obtained separately in high yield.
CONSTITUTION: Fruits of orange, lemon, grapefruit, peach, apple, tomato, grape or pineapple are directly or after pretreated, e.g., calyxes are removed, peeled, crushed, water is added or precooled, cooled to the temperature range where ice crystals are formed, or to the frozen state and warmed to the ice crystal-forming range. The resultant half-freezing or half-melting fruits are squeezed. Then, preferably the filtration residue is squeezed at a higher temperature than that at the first squeeze and, when necessary, squeeze is repeated at a further higher temperature.
