Abstract

Additive is mfd. which forms a stable turbid suspension in a fruit juice or in a fruit juice based drink. The principal raw material for the additive is the white pith which lines the skins of citrus fruits, namely, orange, lemon, lime and grapefruit. The process includes the following steps:- (1) the pith is removed from the skin and finely shredded and chopped into tiny fragments; (2) the fragments are thoroughly rinsed in water; (3) the washed pith is blanched in boiling water; (4) citric acid is added to the pith in the proportion of between 1 and 8 g, pref. 2 and 5 g, per kg of pith weighed before washing; (5) the mixt. is boiled to evaporate most of the wash water; (6) the concentrate is refined by sieving and then grinding to the consistency of fresh cream. Additive is for fruit juices and fruit juice based drinks. It forms a creamy, turbid suspension which is quite stable over indefinite periods. This avoids juices and drinks which appear as a heavy sediment topped with practically clear liq.
