- Способ получения гидролизата белка молочной сыворотки заключается в использовании сывороточного белкового продукта с содержанием белка по крайней мере 65%, рассчитанного на сухое вещество, в сочетании с методом нестатичного pH с последующей ультрафильтрацией / микрофильтрацией. Способ обеспечивает высокий выход продукта с хорошим вкусом и органолептически приемлемый.
