SUBSTANCE: special vodka contains, as initial ingredients, aroma alcohol of coniferous distillate, sugar syrup with a concentration of 65.80%, rectified alcohol “Lux”, drinking reclaimed water, at the following content per 1000 dal: aroma alcohol of coniferous distillate – 2000-2500 l, sugar syrup 65.80% - 70-75 l, water-alcohol liquid of ethyl rectified alcohol “Lux” and drinking reclaimed water – the rest for strength of 40 vol.%.

EFFECT: invention provides for the improvement of organoleptic properties of a beverage.

Description

The invention relates to the alcoholic beverage industry, in particular to vodka.

A known method for the production of special vodka "Ship Grove" containing aromatic alcohol from juniper berries and pine nuts (p., RU, 218259569, IPC C12G 3/06, 2002). The disadvantages of the known vodka are the increased cost and complexity of the process of obtaining this vodka, due to the multicomponent nature of its composition.

A known method for producing a strong alcoholic drink "Kedrovka" containing ethyl alcohol, sugar syrup, water, aromatization of which is carried out by contact with cedar wood [p., RU, 2396334, IPC C12G 3/06, 2006]

However, this vodka has low organoleptic properties, since contact with cedar staves or wood chips is carried out for only 0.5-4 hours.

The technical result of the proposed vodka is the expansion of the range of alcoholic beverages, giving it preventive properties and improving the organoleptic properties of the drink.

The technical result is achieved by the fact that vodka containing sugar syrup with a concentration of 65.8%, rectified alcohol "Lux", drinking water corrected and aromatic alcohol of coniferous distillate is enriched with a complex of biologically active substances contained in it.

The ingredients included in vodka are used at the following content of the original ingredients per 1000 decalitres:

- aromatic alcohol of coniferous distillate, l 2000 - sugar syrup 65.8%, l 65-70 - rectified ethyl alcohol "Lux" and corrected drinking water - the rest up to a fortress of 40%.

For the preparation of vodka "Coniferous aroma" is used:

- rectified ethyl alcohol "Lux" in accordance with GOST 5962-67;

- drinking water according to GOST 2874-82 with hardness up to 1 mol/m ³ for natural water and up to 0.2 mol/m ³ for corrected water;

- granulated sugar refined according to GOST 22-94;

- coniferous distillate.

In the production of special vodka, auxiliary materials are used that are approved by the institutions of the State Sanitary and Epidemiological Supervision of Russia for use in the alcoholic beverage industry.

Special vodka is obtained as follows:

To obtain aromatic alcohol, the coniferous distillate obtained by evaporating the coniferous aqueous extract is mixed with a water-alcohol liquid with a strength of 50% and distilled. A water-alcohol solution (sorting) and aromatic alcohol of coniferous distillate are prepared.

The resulting sorting is thoroughly mixed, and after adjusting its strength, it is pumped into a pressure tank, from where it is sent to a coal cleaning battery.

Filtered vodka is sent to the finishing vat. Sugar refined in the form of sugar syrup with a concentration of 65.80% is added to the finishing tank.

After adding the ingredients to the finishing vat, the vodka is thoroughly mixed and the strength is checked. In case of deviation from the standard, vodka is corrected in the same vats by adding alcohol or water, followed by mixing and checking the strength.

Ready vodka after control filtration is sent for bottling.

Ready vodka has the following content of initial ingredients per 1000 dal:

- aromatic alcohol of coniferous distillate, l 2000-2500 - sugar syrup 65.8 0%, l 65-70 - water-alcohol liquid from ethyl alcohol rectified "Lux" and water drinking corrected - rest

The proposed vodka allows you to expand the range of vodkas with preventive properties, give vodka a perceptible coniferous aroma and a pleasant mild taste.

Organoleptic:

Appearance - transparent liquid without foreign inclusions;

Color - colorless;

Taste - soft, inherent in vodka;

The aroma is a characteristic vodka, specific, with perceptible coniferous tones.

Example 1

To prepare 1000 dal of special vodka, a water-alcohol solution (sorting) is prepared in a sorting vat using rectified ethyl alcohol "Lux" and water corrected on a membrane unit, while the amount of alcohol and water is selected based on obtaining a blend of 40%. The resulting mixture is kept for a time sufficient for the reaction of water with alcohol and stabilization of sorting. Then the water-alcohol liquid (sorting) is passed through a coal cleaning battery with a filtration rate of up to 40 dal/hour for fresh coal and up to 30 dal/hour for regenerated coal.

To obtain aromatic alcohol, coniferous distillate is mixed with a water-alcohol liquid with a strength of 50% and distilled.

To prepare 1000 dal of special vodka, a water-alcohol liquid (sorting), aromatic alcohol of coniferous distillate in the amount of 2000-2500 liters, sugar syrup 65.80% in the amount of 65-70 liters are introduced into the finishing vat. After adding the ingredients, the vodka is thoroughly mixed and the strength is checked. If the strength of vodka deviates from the standard, it is corrected in these vats by adding rectified ethyl alcohol "Lux" or corrected drinking water, followed by mixing and checking the strength. The finished vodka is specially filtered and sent for bottling, while the vodka has the following content of initial ingredients per 1000 dal:

With this ratio of ingredients, a special transparent, colorless vodka with a mild vodka taste and a characteristic coniferous aroma, 40% strength, enriched with a wide range of biologically active substances, was obtained.

Example 2

Special vodka is prepared by blending analogously to example 1 with the following content of initial ingredients per 1000 dal: the ratio of ingredients, l/1000 dl of the finished product:

Aromatic alcohol of coniferous distillate, l 2250 Citric acid, kg 1.8-2.0 Sugar syrup 65.80%, l 65-70 water-alcohol liquid from ethyl alcohol rectified "Lux" and water drinking corrected - Rest

With this ratio of ingredients, a special transparent, colorless vodka with a mild vodka taste and a coniferous aftertaste, a characteristic coniferous aroma, a strength of 40%, enriched with a wide range of biologically active substances, was obtained.

Example 3

Special vodka is prepared by blending in the same way as in example 1 with the following content of initial ingredients per 1000 dal:

Aromatic alcohol of coniferous distillate, l 2500 Succinic acid, kg 2.0-2.2 Sugar syrup 65.80%, l 65-70 water-alcohol liquid from ethyl alcohol rectified "Lux" and water drinking corrected - Rest

With this ratio of ingredients, a special transparent, colorless vodka with a mild vodka taste and a characteristic coniferous aroma, 40% strength, enriched with a wide range of biologically active substances, was obtained.

The preparation of special vodka with a quantitative deviation of the ingredients less than the lower limit leads to the production of vodka with a sharp vodka taste.

The preparation of special vodka with a quantitative deviation of the ingredients greater than the upper limit leads to a deterioration in the organoleptic characteristics of the drink.

Thus, examples 1-3 confirm the found optimal prescription amounts of ingredients and their quantitative ratios for the composition of the claimed vodka.

Using the combination of all the proposed ingredients makes it possible to achieve a technical result - to obtain a special transparent vodka, with a mild taste, pleasant freshness, vodka aroma with perceptible coniferous tones and coniferous aftertaste, with a strength of 40%.

The developed vodka "Coniferous aroma" has a natural aroma of vodka, the taste is clean, invigorating and piquant. The developed recipe for obtaining special vodka allows you to expand the range of vodkas and improve organoleptic properties.

The production of special vodka can easily be implemented in the alcoholic beverage industry.
