SUBSTANCE: invention relates to vodka comprising the following components per 1000 dal of ready product: sodium hydrocarbonate, 0.38-0.4 kg; citric acid, 0.18-0.2 kg; natural honey of light sorts, 1.9-2.0 kg; 65.8% sugar syrup, 7.4-7.5 l; linden, sweet clover and marjoram aromatic alcohol, 8.8-9.0 l, and rectified ethyl alcohol "Ekstra" and purified drinking water enriched with silver ions with the concentration 0.025 mg/l, the balance, to provides the blend strength 40%. The special vodka shows improved organoleptic indices involving delicate tint of lungwort-fir-vanilla aroma.

Description

The invention relates to the distillery industry, and in particular to the production of special vodkas.

Known special vodka "Khakasskaya" (RF Patent №2106406, cl. C 12 _^3/08, publ. 1988.03.10) having the original citrus strawberry flavor and aromatic alcohol containing from pryanoaromaticheskogo feedstock comprising coriander, tarragon and bitter lemon balm, as well as honey and water-alcohol liquid from drinking water and rectified ethyl alcohol of higher purification.

The organoleptic properties of this famous special vodka are not high enough. This fact is confirmed by low taste due to the lack of balance of acidic and sweet in the drink of this composition, the lack of fullness of taste due to inharmoniousness and organicity of sweet tones, insufficient softness of the drink, the presence of harshness of alcohol in the taste due to the use of rectified ethyl alcohol of higher purification.

Known having original spicy salty taste and aroma specific algae special vodka "Governor Polar" (RF Patent №2169183, cl. C 12 _^3/06, publ. 2001.06.20) containing citric acid, sodium bicarbonate, natural honey, aromatic alcohol dried seaweed and water-alcohol liquid. The specific characteristics of the aroma and taste of this famous vodka are especially determined by its insufficiently high organoleptic characteristics.

The closest analogue of the proposed special vodka is special vodka "Cossack Russia" (RF Patent №2112795, cl. C 12 G _^3/06, publ. 1998.06.10) containing at 1000 dal of finished product 22,8-23,2 liters of sugar syrup 65.8%; 4.8-5.2 l of aromatic alcohol from a mixture of plant materials of fourteen items: bitter wormwood, yarrow, thyme, peppermint, sweet clover, St. John's wort, linden (flowers), nettle, immortelle, oregano, common chamomile, pharmacy chamomile (whole leaves); 0.04-0.06 l of aniseed essential oil 1: 100, rectified ethyl alcohol of the highest purity and drinking water corrected with natural silver content of 0.025-0.035 mg / dm ³ - calculated on the strength of 40%.

In this famous vodka, special organoleptic characteristics are not high enough for the following reasons. Since the action of some herbs in a multicomponent mixture of plant materials is compensated by the action of others, the taste and aroma complex of the drink is not replenished with substances in the form of new and original properties. Thus, the disadvantages of this known vodka are its insufficiently high organoleptic characteristics due to the lack of original, pleasant for a wide range of consumers, special taste and aromatic individual properties.

The technical result of the proposed vodka is special is to increase its organoleptic characteristics.

The specified technical result is achieved by the fact that special vodka containing sugar syrup with a concentration of 65.8%, aromatic alcohol of linden, sweet clover and oregano, rectified ethyl alcohol and corrected drinking water, enriched with silver ions at a concentration of 0.025 mg / l additionally contains sodium bicarbonate, acid natural lemon and honey of light varieties, and as rectified ethyl alcohol contains Extra alcohol, in the following ratio of ingredients, kg per 1000 gave the finished product:

A comparative analysis of the results of marketing tasting (see the attached extract from the protocol No. 6) of the special vodka claimed in this invention (with the conditional prescription name “Tsentorgovskaya Kristalnaya”), made according to the formulation of RC 10-29354-04 approved by the Ministry of Agriculture of the Russian Federation (a copy of the recipe is attached ), and similar known special vodkas showed that the organoleptic characteristics of the claimed vodka are higher than those known (see table 4). Moreover, when evaluating the aroma of the claimed vodka special, an unexpected new pleasant aroma was observed that was not observed in known vodka: a subtle, delicate, delicate, honey-fir-vanilla tone that is unusual for any of the ingredients included in the claimed vodka composition. Also, the claimed vodka shows a manifestation in the aftertaste of velvet freshness of thick cream. This indicates an unusual significant increase in the special softness of vodka.

Achieving the indicated technical result is ensured by the fact that special vodka containing sugar syrup with a concentration of 65.8%, aromatic alcohol of linden, clover and oregano, rectified ethyl alcohol and corrected drinking water enriched with silver ions with a concentration of 0.025 mg / l, is characterized in that it additionally contains sodium bicarbonate, citric acid and natural honey of light varieties, and as rectified ethyl alcohol it contains rectified ethyl alcohol "Extra", in the following ratio gradients, kg per 1000 dal of finished product:

The claimed technical solution - the composition of vodka - can be recognized as meeting the requirements of novelty, since no analogue has been found, characterized by features identical to all the essential features of the invention.

The invention can be recognized as having an inventive step due to the fact that it does not explicitly follow from the prior art, since the influence of the transformations prescribed by this invention, characterized by significant features distinctive from the prototype, aimed at achieving the claimed technical result is not revealed from the prior art.

The present invention meets the requirement of industrial applicability, since it is manufactured and can be used in the alcoholic beverage industry.

Received new vodka with a soft, rounded taste and a delicate vodka aroma with a light copper-fir-vanilla hue, which has high original organoleptic properties that give it a bright personality. The extraordinary qualities of the claimed composition of vodka are obtained due to the best compatibility of the main and additional ingredients with the stated quantitative ratio, as well as due to the stabilizing effect of the healing properties of silver-plated water.

With the introduction of light honey (the most valuable variety), the claimed composition was enriched with the bioelements and biocatalysts contained in it (potassium, sodium, calcium, magnesium, manganese, zinc, phosphorus, iron, chlorine, vitamins, enzymes, organic acids, tannins and volatile substances, fructose glucose, volatile).

In addition, light-class honey introduced into the composition of vodka the easily digestible monosaccharides (glucose, fructose) contained in its composition, vitamins, and minerals that actively influence the carbohydrate and protein metabolism of the human body, which act firmly and prevent the development of atherosclerosis. Also added therapeutic and antibacterial beneficial substances.

The use of citric acid significantly reduces the methanol content in vodka, since the introduced citric acid reacts with methanol and converts it into aromatic acetals, which improves the quality of vodka.

The use of light honey and aromatic alcohol of a mixture of honey plants in combination with citric acid and “silver” water enhances the organoleptic and healing properties of the finished product due to the reliable preservation of useful elements, stabilization of the original aroma and the provision of disinfecting properties.

The synergy of the action of the components that make up vodka is particularly special. The aromatic, healing and biologically active substances of honey and aromatic alcohol of linden, sweet clover and oregano flowers not only transfer their inherent properties into the finished product, but together with sugar syrup, bicarbonate sodium, citric acid and water-alcohol liquid provide an increase in mass transfer processes and acceleration assimilation of aromatic substances, as a result of which there appears an unexpected new pleasant honey-fir-vanilla tone in the aroma of the claimed vodka, unusual for any of the ingredients of the composition ui.

The organic combination of light honey with aromatic alcohol of a mixture of flowers and herbs of honey plants: sweet clover, oregano and linden (flowers) allows you to get a long-lasting aroma in the finished product, associated with the smell of flowering summer - a fresh light wave of the summer breeze from a flowering glade at the edge of a deciduous forest : light delicate tone of honey-fir-vanilla aroma in harmoniously mild vodka taste.

The aroma-forming complex softens the taste of vodka, gives it softness, eliminates alcohol defects and provides, against the background of a soft vodka aroma, a light odor tone of a delicate copper-fir-vanilla tone.

The following raw materials are used for the preparation of this vodka under the code name "TSENTRTORGOVSKAYA CRYSTAL":

- rectified ethyl alcohol "Extra" according to GOST R 51652-2000;

- drinking water according to GOST R 51232-98 and SanPin 2.1.4.1074-01 with a hardness of up to 0.1 mol / m ³ for reclaimed water in a reverse osmosis unit enriched with silver ions;

- linden (flowers) according to GOST 6518-69;

- sweet clover (grass) according to GOST 14101-69;

- oregano (grass) according to GOST 21908-93;

- refined sugar according to GOST 22-94;

- natural honey (light varieties) according to GOST 19792-2001;

- sodium bicarbonate in accordance with GOST 2156-76;

- citric acid according to GOST 908-79;

- crushed active charcoal brand BAU-A according to GOST 6217-74.

In the production of vodka, the special “CENTRTORGOVA CRYSTAL” use auxiliary materials permitted by the institutions of the State Sanitary and Epidemiological Service of Russia for use in the alcoholic beverage industry.

The result is a new composition - vodka with new organoleptic properties, stabilized aroma, which has therapeutic and prophylactic and enhanced antiseptic properties.

For the production of 1000 gave special vodka under the conditional name "CENTERTORGOV CRYSTAL" use materials and raw materials in the ratios specified in tables 1, 2 of Appendix I.

Vodka is prepared as follows:

1. Water enriched with silver ions with a concentration of 0.025 mg / dm ^{3 is} obtained by treating with a current of 10 mA a stream of water from a reverse osmosis unit with a capacity of 1 m ³ / h. At the same time, water preliminarily purified at the reverse osmosis unit passes the electrolytic dissolution chamber of silver of the Aquatime-S device, where the working silver-containing electrodes are placed.

The device was manufactured by International Water Service LLC, St. Petersburg, according to TU 3697-0004-58306436-2002 (certificate of conformity No. РОСС RU.MP06.A00365 dated 12/17/02, sanitary and epidemiological report No. 78.0103.369.P. 003317.05.02 dated 05.23.02)

2. A water-alcohol solution (sorting) is prepared in such a way as to obtain vodka with a strength of 40%.

3. Sodium bicarbonate in the form of an aqueous solution is introduced into the sorting vat during the mixing of alcohol with water.

4. The resulting sorting is thoroughly mixed and, after adjusting its strength, is pumped to a pressure tank, from where it is sent to a coal-cleaning battery. Sorting filtration rate - up to 40 dal / h for fresh coal and up to 30 dal / h for regenerated coal.

Filtered vodka is sent to a clean-up vat.

5. Natural honey is added to the vat in a dissolved state. To do this, honey is diluted with softened water in a ratio of 1: 5, thoroughly mixed, heated to a boil, filtered in hot form, cooled and added with stirring to a clean pot.

6. Citric acid, previously dissolved in 40% vodka, is added to the finishing vat.

7. The aromatic alcohol of linden, clover and oregano is prepared in accordance with Table 3 of Appendix II and added to the finishing vat.

8. Sugar, refined in the form of a syrup, with a concentration of 65.8%, is added with constant stirring to a finishing vat.

After adding the components, vodka is thoroughly mixed and the strength is checked. When deviating from the standard for strength, vodka is adjusted in the same vats by adding alcohol or water, followed by mixing and checking the strength. Vodka has the following indicators:

Physicochemical:

Organoleptic:

- Appearance - a transparent liquid without impurities and sediment;

- Color - colorless;

- Taste - soft, inherent to vodka;

- Aroma - vodka with a touch of honey-fir-vanilla.

Ready vodka contains the following ingredients, kg per 1000 gave the finished product:

Example 1 (best option).

To prepare 1000 dal of vodka, a water-alcohol solution is prepared in a sorting vat using rectified ethyl alcohol “Extra” and drinking water, corrected on a reverse osmosis unit, and additionally enriched with silver ions at a concentration of 0.025 mg / l using the Aquateim silver water treatment device -FROM". The amount of alcohol and water is selected based on a blend strength of 40%. Then sodium bicarbonate in the amount of 0.4 kg in the form of an aqueous solution is introduced into the sorting vat during the mixing of alcohol with water. The resulting sorting is thoroughly mixed and, after adjusting its strength, is pumped to a pressure tank, from where it is sent to a coal-cleaning battery. Sorting filtration rate - up to 40 dal / h - for fresh coal, and up to 30 dal / h for regenerated coal.

Then prepare a solution of honey. To do this, light-colored honey in an amount of 2.0 kg is diluted with softened water in a ratio of 1: 5, thoroughly mixed, heated to a boil, filtered hot, cooled and the resulting solution is introduced into the finishing vat with stirring. Citric acid in an amount of 0.2 kg, previously dissolved in 40% vodka, is added to the finishing vat. Then, sugar syrup with a concentration of 65.8% in the amount of 7.5 kg is prepared and added while stirring in a fine tun. Then, aromatic alcohol of linden, clover, and oregano flowers is prepared (see Appendix II), and in the amount of 9.0 L it is added to the finishing vat with constant stirring.

After the ingredients are added to the vat, the vodka is thoroughly mixed and the strength is checked. When deviating from the standard, vodka is adjusted in these tanks by adding alcohol or water, followed by mixing and checking the strength. The finished vodka is filtered and sent for bottling, while the vodka has the following ratio of ingredients, kg per 1000 gave the finished product:

Sodium bicarbonate 0.4 Citric Acid 0.2 Natural honey of light grades 2.0

The product achieves a technical result.

The preparation of vodka with a quantitative deviation of the ingredients in the composition is less than the lower limit leads to vodka with a pungent smell and taste of alcohol, that is, the technical effect is not achieved.

Example 3

When preparing vodka with a quantitative deviation of the ingredients above the upper limit, the technical result is not achieved, and according to the organoleptic properties of the drink cannot be attributed to vodka.

Thus, examples 1-3 confirm the found optimal amounts of ingredients and their quantitative ratios for the composition of the claimed vodka.

Thus, the presented special vodka according to the invention has improved original organoleptic characteristics: in its aroma a delicate tone of copper-fir-vanilla aroma, which is not inherent in its components, is determined.
