The composition for special vodka "Baikalskaya" with the strength 40% comprises cedar nut aroma alcohol taken in the amount 28-31 l prepared from 6 kg of cedar nuts and 60 l of an aqueous-alcoholic liquid with the strength 50%, rectified ethyl alcohol "Luks" and purified water. The proposed invention allows providing the enhancement of organoleptic indices due to giving light, mild after tasting with pleasant oiliness and light cedar nut tint to vodka. Except for, invention provides enhancing stability of organoleptic properties in prolonged storage of vodka.

The invention relates to the distillery industry, in particular to compositions for special vodkas.

Known composition of ingredients for special vodka "New", described in the book "Recipes for alcoholic beverages and vodkas", Moscow, 1981, p.275. For the preparation of special “New” vodka with a strength of 40%, rectified ethyl alcohol of the highest purity, corrected drinking water, aromatic caraway alcohol and sugar syrup are used.

Its disadvantage is that the aromatic cumin alcohol included in vodka contains essential oil of caraway seeds, which, during prolonged storage in the light, releases thymol, anethole, citral. This circumstance leads to a change in the organoleptic properties of vodka during its long-term storage, after 5-6 months the organoleptic properties are completely lost, which reduces the consumer properties of vodka, and the requirement to ensure the storage of vodka in a dark place is not always observed.

Known composition for special vodka, containing aromatic alcohol of pine nuts, rye bran, sugar and water-alcohol liquid (RF patent 2128696, CL 12 G 3/06, publ. 1999).

Its disadvantage is that it contains rye bran, which during the storage of vodka can form protein precipitates, which reduces the organoleptic characteristics of the finished product.

The technical result of the proposed composition is to increase the organoleptic characteristics by giving the vodka a light, soft aftertaste with a pleasant oiliness, with a slight shade of pine nut flavor and increase their stability during storage.

The proposed composition for special Baikalskaya vodka has an inventive step, since the proposed combination of features, namely aromatic alcohol of pine nuts in a strictly defined ratio with water-alcohol liquid, exhibits a new property - obtaining special vodka with new organoleptic properties. When the component composition of the composition is used together, a new soft taste is formed of a thin and elegant structure with a light shade of pine nut aroma, which does not change during long-term storage. These organoleptic properties are observed with a fairly narrow interval value of the aromatic alcohol of pine nuts, namely at 28-32 liters per 1000 decaliters of the finished product. When the values of the aromatic alcohol of pine nuts are less than 28 l / 1000 gave the finished product, the aroma of pine nuts is not observed, and when the amount of aromatic alcohol of pine nuts more than 32 liters per 1000 gave the finished product, bitterness appears. Vodka "Baikal" was evaluated by the Central Tasting Commission at 9.55 points (protocol No. 8 of March 1, 2002).

The production of special Baikalskaya vodka is carried out according to traditional technology and meets the requirements of GOST R 51355-99 "Vodka and vodka special. General technical conditions" and PTR 10-12292-99 "Production and technological regulations for the production of vodka and alcoholic beverages, approved by the Food and Industry Department of the Ministry of Agriculture and Food Russia 10.21.99.

The following raw materials are used for the preparation of special Baikal vodka: rectified ethyl alcohol "Lux" according to GOST R 51652-2000, drinking water according to GOST R 51232-98 and SanPin 2.1.4.1074-01 with a hardness of up to 1 mol / m for natural un softened water and up to 0.20 mol / m ³ for corrected water, pine nuts in accordance with GOST 14161-68.

A water-alcohol solution is prepared in such a way as to obtain finished vodka in a vat of 40% strength. The resulting solution is thoroughly mixed and, after adjusting its strength, is pumped into the pressure tank, where the solution comes from a coal-cleaning battery. The filtration rate through a layer of coal 4 m high is up to 40 dal per hour for fresh coal and up to 30 dal per hour for regenerated coal.

To prepare the aromatic alcohol of pine nuts, mainly 6 kg of sorted pine nuts are used, which is poured with an aqueous-alcoholic liquid with a strength of 50% in a ratio of 1:10. The technological parameters for the production of aromatic alcohol of pine nuts are shown in table 1.

The estimated amount of aromatic alcohol of cedar nut is set in vodka, which is located in the finishing vat. The contents of the vat are thoroughly mixed, adjusted if necessary, and after an 8-hour rest, the product is sent for bottling with mandatory control filtration.

In addition, their stability during long-term storage is ensured and the range of special vodkas is expanded.
