Claims (25)
1. Жидкая немолочная композиция забеливателя, содержащая:
масло в диапазоне 10–16 мас.%;
соли казеината в диапазоне от 1,5 до 2,2 мас.%;
моно-/диглицериды в диапазоне от 0,13 до 0,3 мас.%;
сложные эфиры винной кислоты и моноглицеридов в диапазоне от 0,4 до 0,8 мас.%;
каппа-каррагинан в диапазоне от 0,06 до 0,09 мас.%;
йота-каррагинан в диапазоне от 0,05 до 0,11 мас.%; и
гуаровую камедь в диапазоне от 0,1 до 0,4 мас.%.
2. Забеливатель по п. 1 представляет собой забеливатели с увеличенным сроком хранения (УСХ) или асептические, пригодные для длительного хранения жидкие забеливатели с текстурой типа сгущенного молока с сахаром.
3. Забеливатель по п. 1 представляет собой забеливатели с УСХ или асептические, пригодные для длительного хранения жидкие забеливатели с йогуртообразной текстурой.
4. Забеливатель по п. 3 дополнительно содержит лактат кальция в диапазоне от 0,1 до 0,3 мас.%.
5. Забеливатель по п. 1, в котором масло представляет собой высокоолеиновые масла, содержащие растительное масло, выбранное из группы, состоящей из высокоолеинового масла канолы, высокоолеинового соевого масла, высокоолеинового подсолнечного масла, высокоолеинового сафлорового масла или их комбинации.
6. Забеливатель по п. 1, в котором соли казеината представляют собой казеинат натрия, казеинат кальция или их комбинацию.
7. Забеливатель по п. 1 дополнительно содержит сахар, содержащий сахарозу, лактозу, глюкозу, фруктозу, подсластитель и/или их комбинации в диапазоне от 0 до 40 мас.%. забеливателя.
8. Забеливатель по п. 1 дополнительно включает в себя буфер, содержащий гидрофосфат калия, цитрат калия, цитрат натрия, бикарбонат натрия или их комбинацию.
9. Напиток, содержащий забеливатель по любому из предшествующих пунктов.
10. Напиток по п. 9 представляет собой кофе, чай или шоколад.
11. Способ получения забеливателя по п. 1, включающий:
(i) растворение ингредиентов, указанных в п. 1, за исключением масла, в горячей воде при высокосдвиговом перемешивании;
(ii) добавление масла к смеси, полученной на стадии (i), при высокосдвиговом перемешивании;
(iii) гомогенизацию композиции при температуре в диапазоне 70–85°С;
(iv) стерилизацию композиции с помощью ультравысокотемпературной (УВТ) обработки при 138–147°С;
(v) гомогенизацию композиции при температуре в диапазоне 70–85°С;
и
(vi) охлаждение и подачу забеливателя в асептических условиях.
