Сухая гранулированная смесь для кваса, содержащая в своем составе сахар и дрожжи, отличающаяся тем, что дополнительно вводят ячменный и/или ржаной солод, молочно-кислые бактерии, продукты переработки плодово-ягодного сырья и/или растительные экстракты в следующем количестве: сахар 54-64%, сухой квас 45,5-35,5% или смесь сухого кваса и ржаного солода 45,5-35,5% в соотношении от 4:1 до 1:4 или смесь сухого кваса, ржаного солода и ячменного солода 45,5-35,5% с соотношением сухого кваса и солодовой части от 4:1 до 1:4 и с соотношением ржаного и ячменного солодов от 3:2 до 2:3; сухое растительное пряно-ароматическое и плодово-ягодное сырье при норме задачи на 100 кг готовой смеси 0,09-8 кг и/или экстракты из него при норме задачи на 100 кг готовой смеси 0,45-3,0 дм3; дрожжевые подкормки, разрешенные к применению в пищевой промышленности при норме задачи на 100 кг готовой смеси 0,5-1 кг, после смешивания компонентов проводят гранулирование смеси и на гранулы наносят дрожжи или смесь дрожжей и молочно-кислых бактерий или вносят их в процессе смешивания в сухом виде, гранулы подсушивают и фасуют.
