Claims (18)
1. Антимикробная композиция, включающая количество низина и ε-поли-L-лизина, эффективное для предотвращения увеличения микробных чисел в пищевом продукте на порядок 1 log или менее через 3 дня при температуре от 0°С до 50°С, с возможностью предотвращения или замедления образования токсина конкретными пищевыми патогенными микроорганизмами.
2. Антимикробная композиция по п.1, включающая, по крайней мере, 1 чнм низина и, по крайней мере, 10 чнм ε-поли-L-лизина.
4. Антимикробная композиция, включающая количество низина и ε-поли-L-лизина, эффективное для поддержания активности низина в пищевом продукте 90% или более от начальной активности низина через 14 дней, где начальная активность низина выражена в МЕ/г.
5. Антимикробная композиция по п.4, включающая, по крайней мере, 1 чнм низина и, по крайней мере, 10 чнм ε-поли-L-лизина.
7. Пищевой продукт, включающий количество низина и ε-поли-L-лизина, эффективное для предотвращения увеличения микробных чисел в пищевом продукте на 1 порядок или менее через 3 дня при температуре от 0°С до 50°С.
8. Пищевой продукт по п.7, где пищевой продукт включает количество низина и ε-поли-L-лизина, эффективное для поддержания активности низина в пищевом продукте 90% или более от начальной активности низина через 14 дней, где начальная активность низина выражена в МЕ/г.
9. Пищевой продукт по п.7, включающий, по крайней мере, 1 чнм низина и, по крайней мере, 10 чнм ε-поли-L-лизина от веса пищевого продукта.
11. Пищевой продукт по п.7, где пищевой продукт выбран из группы, состоящей из приправ, соусов, маринадов, молочных продуктов, пастообразных продуктов, маргарина, мяса, макаронных изделий, лапши, готового риса, рисового пудинга, овощей и напитков.
12. Способ предотвращения увеличения микробных чисел в пищевом продукте, включающий смешивание низина и ε-поли-L-лизина с пищевым продуктом в количестве, эффективном для предотвращения увеличения микробных чисел в пищевом продукте на порядок 1 log или менее через 3 дня.
13. Способ по п.12, в котором низин и ε-поли-L-лизин добавляют к пищевому продукту вместе.
14. Способ по п.12, в котором низин и ε-поли-L-лизин добавляют к пищевому продукту отдельно.
15. Способ по п.12, в котором низин и ε-поли-L-лизин являются эффективными для предотвращения увеличения микробных чисел в пищевом продукте, имеющем температуру от 0°С до 50°С.
16. Способ по п.12, в котором по крайней мере, 1 чнм низина и, по крайней мере, 10 чнм ε-поли-L-лизина от общего веса пищевого продукта.
18. Способ по п.12, где пищевой продукт выбран из группы, состоящей из приправ, соусов, маринадов, молочных продуктов, пастообразных продуктов, маргарина, мяса, макаронных изделий, лапши, готового риса, рисового пудинга, овощей и напитков.
