Claims (17)
1. Композиция, содержащая гидролизованный казеиновый белок и сывороточный белок в весовом соотношении 9:1-1:1 в расчете на сухое вещество, представляющая собой прозрачную жидкость при рН 4, при растворении в воде или добавлении к воде в количестве 40 г/л при 10°С.
2. Композиция по п.1, в которой фракция сывороточного белка не гидролизована.
3. Композиция по п.1, обладающая пониженной аллергенностью по сравнению с белковой композицией до гидролиза.
4. Композиция по любому из пп.1-3, в которой пептидная фракция гидролизованного белка с молекулярным весом менее 5000 Да составляет более 90 мас.%, предпочтительно более 95 мас.% от количества белка, присутствующего в гидролизованном белке.
5. Композиция по любому из пп.1-3, в которой пептидная фракция гидролизованного белка с молекулярным весом менее 1500 Да составляет более 80 мас.%, предпочтительно, более 85 мас.% от количества белка, присутствующего в гиролизованном белке.
6. Композиция по п.1, в которой в качестве источника белка используют обезжиренное молоко.
7. Композиция по п.1, содержащая 10-150 г общего белка, в расчете на сухое вещество, на 1000 г композиции.
8. Композиция по п.1, с содержанием воды менее 10% мас./мас., предпочтительно менее 5% мас./мас.
9. Пищевой продукт, предпочтительно напиток, содержащий композицию по любому из предыдущих пунктов.
10. Напиток по п.9, представляющий собой спортивный напиток, безалкогольный напиток или лечебный напиток.
11. Способ получения композиции, содержащей гидролизованный казеиновый белок и сывороточный белок, включающий гидролиз, по меньшей мере, казеинового белка с получением композиции, представляющей собой прозрачную жидкость при рН 4 при растворении в воде или добавлении к воде в количестве 40 г/л при 10°С, причем соотношение между присутствующим казеином и сывороточной белковой фракцией, в расчете на сухую массу материала, составляет 9:1-1:1.
12. Способ по п.11, в котором сывороточную фракцию и казеиновую фракцию подвергают гидролизу.
13. Способ по п.11, в котором казеиновую и/или сывороточную фракцию гидролизуют с помощью эндопротеазы, предпочтительно, пролин-специфичной эндопротеазы.
14. Способ по любому из пп.11-13, дополнительно включающий гидролиз в присутствии пролин-специфичной эндопротеазы, причем гидролиз с помощью пролин-специфичной эндопротеазы проводят до, после или одновременно с гидролизом в присутствии других эндопротеаз.
15. Способ по любому из пп.11-13, отличающийся тем, что одновременно с или после эндопротеазного гидролиза добавляют экзопротеазу.
16. Применение композиции по любому из пп.1-8 в пищевых или кормовых продуктах.
17. Применение по п.16 в пищевых или кормовых продуктах с целью понижения аллергенности или повышения биоактивности белка в пищевом или кормовом продукте по сравнению с негидролизованным белком.
