Abstract

The new technological production process of bread which includes thermal and hydrothermal treatment of millet, sorghum, oat and rye flours was defined. Raw materials do not include any kind of additives and obtained breads based on millet, sorghum, rye and oat have increased content of natural fibers and optimal sensory properties. The bread formulations include thermal and hydrothermally treated flour in the 70:30 ratio, yeast, sugar, salt and water. The functional and nutritive properties of products originated from dietary fiber and proteins of millet, sorghum, rye and oat flours.
