The process comprising the following steps: preparing all the ingredients for baking; measuring all the prepared ingredients; combining the coconut flour, zero calorie sweetener and baking powder; sifting the prepared dry powder mixture for a fine powder result; adding unsalted butter, all purpose cream and fresh eggs; mixing all the ingredients making a Low Carbohydrates baked rice cake batter; singeing the fresh banana leaf for 10sec- 20 sec, serving as a molder for the Low Carbohydrates baked rice cake batter; molding the banana leaf on the aluminum container/ molder; pouring the Low Carbohydrates baked rice cake batter on the aluminum container with banana leaf; topping the Low Carbohydrates baked rice cake batter with thin slice of cheese and slice of salted egg; pre heating the oven at 170øC-180øC; baking the Low Carbohydrates baked rice cake at 180øC- 200øC for 20 minutes; packing the baked Low Carbohydrates baked rice cake in a box. The utility model provided an alternative optimized process for baked rice cake which is low in carbohydrates and high in fiber. It also successfully utilized the grated coconut pulp waste in the form of coconut flour, addressing the prevailing problem on fruit wastes disposal.
