Abstract

The present utility model relates to a process for baking cake enriched with zucchini comprising the steps of: a) pre-heating oven to 170øC for 15 minutes; b) preparing the pan by grease-line greasing, set aside; c) washing of zucchini; d) peeling of the washed zucchini; e) grating of the peeled zucchini; f) mixing in a bowl a 100 grams of granulated sugar with the grated zucchini, set aside; g) sifting of flour mixture (bread flour, salt, baking powder, baking soda, and cinnamon powder), set aside; h) whipping eggs using hand mixer on medium speed until thick at least 8 minutes then increasing to high until the eggs reaches ribbon stage; i) adding gradually the 150 grams white granulated sugar; j) adding vanilla and vegetable oil while whipping until evenly blended; k) adding the sifted flour mixture (bread flour, salt, baking powder, baking soda, and cinnamon powder), mixing in low speed until just blended; l) folding in the grated zucchini mixed with 100 grams white granulated sugar; m) pouring batter mixture into the prepared pan until two-thirds full; n) baking for 30 minutes; o) loosening cake immediately using a spatula after bringing it out from the oven; p) cooling the cake completely; and q) packing in a 9 inch square cake box.
