The composition of a mutton sausage comprises the following ingredients: 61.76 pcnt mutton/lamb, 0.91 pcnt table salt, 0.31 pcnt phosphate, 0.31 vitamin C, 3.65 pcnt chilled water, 3.65 pcnt textured vegetable protein, 0.15 pcnt carrageenan, 7.31 pcnt water, 10.96 pcnt sugar, 0.46 pcnt ground black pepper, 1.83 pcnt finely chopped garlic, 0.31 pcnt paprika, 1.83 pcnt white wine and 1.83 pcnt pineapple juice, 0.15 pcnt monosodium glutamate and 4.58 pcnt potato starch.
