The composition of mutton burger patty comprised 61.5 pcnt mutton/lamb, 0.91 pcnt table salt, 0.31 pcnt phosphate, 3.65 pcnt chilled water, 0.91 pcnt isolates, 3.65 pcnt textured vegetable protein, 0.15 pcnt carrageenan, 7.3 pcnt water, 0.91 pcnt sugar, 0.15 pcnt ground black pepper, 1.82 pcnt finely chopped garlic, 0.15 pcnt monosodium glutamate, 7.3 pcnt finely chopped onions, 0.15 pcnt celery powder, 0.91 pcnt burger seasoning, 1.82 pcnt milk powder, 3.7 pcnt egg, and 4.56 pcnt potato starch.
