Abstract

Esta referido a composiciones edulcorantes y/o umami, metodos para fabricar las mismas, productos que comprenden las mismas y metodos para mejorar la sensacion en la boca de un producto, por ejemplo, un alimento o bebida sapido o umami. Ademas, las composiciones comprenden un agente edulcorante y/o un agente umami y un componente modulador del sabor. Tambien se refiere a una composicion que comprende: un agente umami; y una composicion moduladora del sabor que consiste de un primer componente modulador del sabor que consiste de una primera sal que tiene un primer cation Mg2+ y un primer anion; un segundo componente modulador del sabor que consiste de una segunda sal que tiene un segundo cation Ca2+ y un segundo anion; y, opcionalmente, un tercer componente modulador del sabor que consiste de una tercera sal que tiene un tercer cation seleccionado de K + y Na+ y un tercer anion; en donde el primer componente modulador del sabor esta a una concentracion de 0.1 mM a 10 mM; en donde el segundo componente modulador del sabor esta a una concentracion de 0.1 mM a 10 mM; en donde el tercer componente modulador del sabor, cuando esta presente, esta a una concentracion de 0.1 mM a 25 mM; en donde el agente umami esta presente en una cantidad de 0.01 % en peso a 5 % en peso; en donde el primer anion se selecciona de citrato, cloruro, fosfato, carbonato, sulfato y sus combinaciones; y en donde el segundo anion se selecciona de citrato, cloruro, fosfato, carbonato, sulfato y sus combinaciones.
