Abstract

Oppløselige kostfiberprodukter kan fremstilles ved hydrolysering av et havre eller byggsubstrat med en a- amylase og gjenvinning av den opp- løselige fraksjon. Det gjenvunne materiale omfatter maltodekstriner og [5-glukan og/eller pentosaner som kost- fibere, med små mengder protein, lipid og aske. Disse blandinger er fargeløse og uten iboende uønsket smak og er derfor egnet for anvendelse i mange forskjellige matvarer. Ved an- vendelse av sentrifugering ved en temperatur vesentlig lavere enn hydrolysetemperaturen kan mengden av lipider og proteiner i kostfiber- produktet reduseres og derved ytter- ligere forbedre produktkvaliteten.
