Den foreliggende oppfinnelse vedrører anvendelse av en fysiologisk akseptabel syre for behandling av ikke-tilberedte pommes frites eller mel for anvendelse i fremstilling av ikke-tilberedte pommes frites. Oppfinnelsen vedrører også en fremgangsmåte for fremstilling av "klar-til-steking" pommes frites poteter, samt pommes frites produsert med denne fremgangsmåte.
I en publikasjon av det Svenske Næringsdepartementet (Swedish National Food Administration) (se www. slv. se/ engdefault. asp) ble det rapportert at mange tilberedte matvarer, spesielt friterte, grillete eller bakte matvarer, overraskende har blitt funnet å inneholde høye nivåer av den toksiske kontaminant akrylamid. Det blir ikke antydet hvordan akrylamidinnholdet i slike matvarer kunne reduseres.
En videre rapport på akrylamidproduksjon i matvarefremstilling forekom i Tareke et al., J. Agric. Food Chem 50: 4998-5006 (2002).
Publikasjon US4297377 beskriver behandling av oppkuttede poteter for frityrsteking med en løsning inneholdende sitronsyre, og GB 1144011 beskriver anvendelse av askorbinsyre. WO9319609 beskriver behandling av oppkuttede poteter med en fysiologisk akseptabel syre, for eksempel sitronsyre, fosforsyre og hydroklorsyre. Også US4937085 og ES2019044 beskriver behandling av oppkuttede poteter med sitronsyre og fosforsyre. Ingen av disse publikasjoner nevner imidlertid at syrebehandling vil redusere mengden akrylamid i potetene etter fritering.
Vi har nå overraskende funnet at akrylamidinnholdet i pommes frites (French fries) kan reduseres ved behandling av nevnte pommes frites før tilbereding med melkesyre-genererende mikroorganismer og/eller med syre.
Det beskrives således anvendelse av en melkesyreproduserende mikroorganisme for behandling av ikke-tilberedte pommes frites for å redusere akrylamidproduksjon i påfølgende tilbereding derav.
Melkesyreproduserende mikroorganismer er kjente, og eksempler inkluderer melkesyrebakterier så som Bifidobacterium sp., Brevibacterium sp., Lactobacillus sp., Lactococcus sp., Leuconostoc sp. Micrococcus sp., Oenococcus sp., Pediococcus sp., og Streptococcus sp. Lactobacilli er spesielt foretrukket, fortrinnsvis Lactobacillus plantarum stammene NCDO 1752 og NCDO 1193 (tilgjengelig fra National Collection of Food Bacteria og Lactobacillus NCIMB 40450. Andre stammer av Lactobacillus som genererer melkesyre og som er sikker for bruk i næringsmiddelbehandling har blitt beskrevet grundig i den vitenskapelige litteratur.
Behandling med en melkesyreproduserende mikroorganisme omfatter fortrinnsvis inkubering i et vandig medium i opptil 7 dager, f.eks. 30 minutter til 24 timer, fortrinnsvis 1 til 6 timer. Inkubering utføres fortrinnsvis ved 4 til 45°C, f.eks. 25 til 35°C, dvs. slik det er konvensjonelt for slike mikroorganismer.
Typisk kan slik behandling involvere homofermentativ melkesyrebakterie-inkubering i et vandig medium.
Den foreliggende oppfinnelse vedrører anvendelse av en fysiologisk akseptabel syre for behandling av ikke-tilberedte pommes frites eller mel for anvendelse i fremstilling av ikke-tilberedte pommes frites for å redusere akrylamidproduksjon i påfølgende tilbereding derav, hvor nevnte syre anvendes i en mengde og styrke tilstrekkelig til å redusere overflate-pH i nevnte ikke-tilberedte pommes frites eller mel til pH 1-5,5.
Den fysiologisk tolererbare syre anvendt i samsvar med oppfinnelsen kan være enhver syre akseptabel for bruk i næringsstoffer, f.eks. organiske syrer som sitronsyre, eplesyre, eddiksyre, maleinsyre, maursyre, ravsyre eller melkesyrer, eller uorganiske syrer så som saltsyre, svovelsyre og fosforsyrer og svovel-dioksid. Anvendelse av sitronsyre og saltsyrer er spesielt foretrukket, og også anvendelse av melkesyre og/eller fosforsyre. Anvendelse av saltsyre og av melkesyre er spesielt foretrukket. Etter syrebehandling lagres nevnte ubehandlete pommes frites fortrinnsvis i opptil 7 dager (f.eks. 30 minutter til 24 timer, fortrinnsvis 1 til 6 timer før tilbereding eller frysing). I foretrukne utførelser av dette aspekt benyttes syrer angitt i krav 2.
I denne prosess anvendes fortrinnsvis syren i form av en bufferløsning.
Etter behandling med syren og/eller den melkesyreproduserende mikroorganisme, kan de ikke-tilberedte pommes frites prepareres ved anvendelse av behandlingsteknikker som eksponerer materialer til temperaturer over 150°C, f.eks. ved baking, grilling, steking eller fritering.
Før slik høytemperaturbehandling, er det ønskelig å skylle det behandlede ikke-tilberedte ("uncooked") produkt med vann.
Tilberedningen kan være en enkelttrinnsoperasjon. Imidlertid kan den i stedet være ett trinn av en flertrinns (f.eks. to trinn) tilberedningsprosedyre. Således er teknikken ifølge oppfinnelsen spesielt appliserbar til pommes frites som er behandlet i samsvar med oppfinnelsen, delvis tilberedt, transportert og/eller lagret, deretter tilberedt igjen.
Dersom hensiktsmessig kan produktene produsert i samsvar med oppfinnelsen ytterligere prosesseres f.eks. med tørking, frysing, kutting, forsegling i fuktsikre beholdere, etc. Slike prosesstrinn, som ofte er konvensjonelle for pommes frites, utgjør ytterligere valgfrie trinn i prosessene.
Imidlertid er oppfinnelsen spesielt appliserbar for produksjon av såkalt ovns-klare pommes frites poteter som er tilveiebrakt til forbrukeren i delvis tilberedt form for steking før servering, og likeledes for produksjon av opphakkete "klar-til-fritering" poteter (f.eks. av typen produsert for fritering i restauranter).
Den foreliggende oppfinnelse vedrører også fremgangsmåte for fremstilling av "klar-til-steking" pommes frites poteter, kjennetegnet ved at fremgangsmåten omfatter oppkutting av potetene, behandling av de oppkuttede poteter med en fysiologisk akseptabel syre, hvor nevnte syre anvendes i en mengde og styrke tilstrekkelig til å redusere overflate-pH i nevnte ikke-tilberedte pommes frites eller mel til pH 1-5,5, fritering av de syre-behandlede poteter, og valgfritt pakking av de friterte poteter i en beholder.
Oppkuttingstrinnet i denne fremgangsmåte er fortrinnsvis slik at det produseres enheter som har et tverrsnitts areal av 10 til 100 mm<2>, fortrinnsvis 25-80 mm<2>.
Beholderen anvendt i disse fremgangsmåter vil typisk være en plastpose, papirkartong eller pose eller annen beholder konvensjonelt anvendt for lagring og transport av "klar-til-steking" pommes frites.
Et ytterligere aspekt av oppfinnelsen vedrører pommes frites kjennetegnet ved at de er produsert med en fremgangsmåte som angitt i krav 3, eller ved en anvendelse som angitt i krav 1 eller 2.
Pommes frites fremstilles fortrinnsvis fra oppkuttede poteter; imidlertid kan de fremstilles fra ekstrudert eller formet karbohydrat-inneholdende pasta produsert ved anvendelse av pulverformig eller granulert potet og/eller korn (f.eks. ris).
Således, kan de ikke-tilberedte pommes frites produseres fra potet og/eller kornmel fermentert med en melkesyre-produserende mikroorganisme eller behandlet med en syre som beskrevet heri før de formes eller ekstruderes i pastaform til pommes frites-former og deretter stekes. Dersom ønskelig kan fermenteringen eller syrebehandlingen utføres på pommes frites-former som er formet eller ekstrudert ved anvendelse av en potet og/eller kornmel-basert pasta.
Potetene som behandles er fortrinnsvis av en sort valgt fra Maris Piper, Beate eller Russet, fortrinnsvis Maris Piper. Saturna, King Edward, Russet Burbank, Bintje, Shepady og Shasta kan også anvendes. Spesielt foretrukket er potetene valgt fra sorter som har et redusert sukkerinnhold på mindre enn 1,5 vektprosent, fortrinnsvis mindre enn 1,0 vektprosent.
I tillegg til fermentering og/eller syrebehandling kan ernæringsproduktene ifølge oppfinnelsen fremstilles med konvensjonelle metoder, som valgfritt involverer skylling og/eller tørking etter behandlingen. Slike pommes frites kan således valgfritt inneholde ytterligere komponenter, så som konvensjonelle ernærings-komponenter eller tilsetningsstoffer, f.eks. salter, sukkere, smakstilsetninger, stabiliserende midler, buffere, etc.
Oppfinnelsen vil nå bli illustrert videre ved henvisning til det påfølgende ikke-begrensende eksempel.
Eksempel 1
Pommes frites
Ingredienser
Poteter av sorten Beate fra Department of Horticulture and Crop Sciences, Agricultural University of Norway, Ås. Potetene ble lagret ved 8°C fra innhøsting inntil tre uker før prosessering der lagringstemperaturen ble redusert til 4°C.
Palmeolje var fra Denofa AS, Fredrikstad, Norge. Oljen hadde maks 0,05% frie fettsyrer, et jodtall på 60, en perioksidverdi på 0,5 mekv/kg og et anisidintall på 5,0. Fettsyresammensetningen var: 12% linolsyre, 42% oljesyre og 45% met-tede fettsyrer.
Lacfobac///us-stammen NCIMB 40450 ble anvendt. Bakterieceller fikk vokse og ble høstet i den logorytmiske vekstfase med sentrifugering, og resuspendert i 1% saltløsning.
Bløtingsløsningen som ble anvendt var:
Saltløsning for fermentering: 1% NaCI med tilsetning av bakterier inntil
1x10<6>celler/ml
Forbehandling av poteter
Poteter (var. Beate) ble skrelt og kuttet med en kniv til stykker på 6x6mm. Stykkene (200 g) ble umiddelbart tilsatt til 400 ml saltløsning. Fermentering foregikk i en inkubator ved 30°C i 5 timer. Kontrollprøver ble skylt i vann og fritert uten forsinkelse.
Fritering
Potetene ble tørket med papirhåndkle og fritert som 150 g porsjoner i palmeolje ved 170°C i en friterer av type Nuovo Elframo, Modell EB (Bergamo, Italia) i 8 min.
Analyser
Tørrmateriale ble bestemt i en vakuumovn ved 70°C natten over. pH i salt-løsningene ble bestemt ved anvendelse av et pH-meter. Løselige faststoff av poteter ble bestemt som °Brix ved anvendelse av et Metier Toledo RE40 refraktometer. Prøvene ble homogenisert og noen få dråper av homogenatene ble applisert til refraktometeret. °Brix er gitt som g sukrose/100 g prøve.
Akkrediterte analyser av akrylamid ble utført ved Steins Laboratorium, Danmark.
Resultater
°Brix-verdien for potetene (var. Beate) var 6,8.
Resultatene fra analysene av de friterte produkter er vist i tabell 1 nedenfor.
Prøvene med hver av produktgruppene ble fritert like lenge, i stedet for å bli fritert inntil en viss produktfarge. Enhver forskjell i akrylamidnivå reflekterer således evnen av behandlingen til å hindre dannelse av akrylamid, uavhengig av fargen som kan dannes under frityr-fritering.
Claims (4)
1. Anvendelse av en fysiologisk akseptabel syre for behandling av ikke-tilberedte pommes frites eller mel for anvendelse i fremstilling av ikke-tilberedte pommes frites for å redusere akrylamidproduksjon i påfølgende tilbereding derav, hvor nevnte syre anvendes i en mengde og styrke tilstrekkelig til å redusere overflate-pH i nevnte ikke-tilberedte pommes frites eller mel til pH 1-5,5.
2. Anvendelse i samsvar med krav 2, hvor nevnte syre er valgt blant melkesyre, sitronsyre, fosforsyre og hydroklorsyrer.
3. Fremgangsmåte for fremstilling av "klar-til-steking" pommes frites poteter,karakterisert vedat fremgangsmåten omfatter oppkutting av potetene, behandling av de oppkuttede poteter med en fysiologisk akseptabel syre, hvor nevnte syre anvendes i en mengde og styrke tilstrekkelig til å redusere overflate-pH i nevnte ikke-tilberedte pommes frites eller mel til pH 1-5,5, fritering av de syre-behandlede poteter, og valgfritt pakking av de friterte poteter i en beholder.
4. Pommes frites,karakterisert vedat de er produsert med en fremgangsmåte som angitt i krav 3, eller ved en anvendelse som angitt i krav 1 eller 2.
