Abstract

Se describe un metodo para evaluar la frescura de un producto de pescado al cortar una cantidad pequena de muestra del producto de pescado, agregar una cantidad efectiva de un reactivo de tincion que contiene por lo menos uno de un colorante permeable en celulas y un colorante fluorescente impermeable en celulas sobre la muestra, incubar la muestra por una duracion predeterminada y determinar la frescura del producto de pescado en base en la fluorescencia emitida en la muestra.
