Abstract
Los polifosfatos controlan el crecimiento de bacterias durante el procesamiento de alimentos; estas composiciones comprenden polifosfatos antimicrobianos solos o en combinacion con acidos organicos y/o sus sales y son efectivos en aplicaciones relacionadas con alimentos, incluyendo: composiciones de limpieza para desinfectar la superficie de alimentos y para limpiar y desinfectar equipo utilizado en el procesamiento de alimentos, y composiciones que se van a agregar a los alimentos para inhibir el crecimiento de microorganismos responsables de enfermedades por consumo de alimentos y putrefaccion durante la distribucion y almacenamiento.
