Abstract
"PRODUTO ALIMENTAR NãO FERMENTADO, E, PROCESSOPARA CONSERVAçãO DE UM PRODUTO ALIMENTAR NãOFERMENTADO". Os produtos alimentícios podem incluirmicroorganismos secos como um agente de biocontrole. Asculturas secas resistem à inativação durante a pasteurização doproduto alimentício. Os microorganismos são selecionados demodo a serem não tóxicos e para inibirem o crescimento demicroorganismos patogênicos. Por exemplo, os microorganismos debiocontrole podem produzir ácido para reduzir o pH do produto,dessa forma inibindo o crescimento de patógenos.
