Abstract

Se proporciona un producto unto plástico comestible que consiste de una fase continua y opcionalmente una fase acuosa, que se caracteriza por el hecho de que la grasa de la fase grasosa incluye cuando mucho 5% de residuo de ácido graso trans insaturado, consiste de 40 - 90% de aceite líquido y 60 - 10% de grasa estructural, la cual grada estructural comprende aceite de palma no modificado químicamente o una o varias fracciones de aceite de palma o una combinacion de 2 o más de ellas, e incluye grada hidrogenada y/o interesterificada y/o grasa animal, de tal manera que la cantidad de grasa interesterificada representa cuando mucho el 70% de la grasa estructural, y contiene cuando mucho X% de triglicéridos POP simétricos, o más de X% de triglicéridos POP simétricos y contiene triglicéridos PPO asimétricos, de tal manera que P20 <-16-4(POP/PPO), en donde P indica triglicéridos POP y PPO, y X = 3.5, y tienen un N2O -> 4.5. En el producto sustancialmente no se desarrollan partículas de grasa de un tamaño visible a simple vista después de un almacenamiento de cuando menos 3 semanas a 5 degree C.
