Abstract

Con el fin de manufacturar chocolate o lo similar, con una incorporacion de 1 a 40% por peso de agua, se introduce una masa de chocolate o lo similar cuidadosamente en una emulsion de agua en aceite, de manera que la emulsion no se destruya ni haya interaccion alguna entre los cristales de azucar y la fase acuosa dispersada. Ventajosamente, la masa es sometida a un acondicionamiento térmico subsecuente, de manera que los cristales de azucar se difunden en las micro gotas de agua de la emulsion, cuya estructura permanece intacta.
