Abstract
Un procedimiento para extrusionar plasticamente un material de pasteleríaconteniendo una grasa, p. ej. chocolate, que consiste en la alimentacióndel material de pastelería conteniendo una grasa, dentro de unaextrusionadora y aplicando presión al material de pastelería conteniendouna grasa, en una forma substancialmente sólida o semisólida no colable,en la parte anterior de una contracción del flujo, a una temperatura ala cual el material de pastelería conteniendo una grasa se extrusionasubstancialmente isotérmicamente y pertenece en una formasubstancialmente sólida o semisólida no colable, para obtener un productoextrusionado homogeneamente axialmente con una sección transversal que esprácticamente del mismo perfil que la salida de la boquilla de laextrusionadora.
