Abstract
Un procedimiento para extrusionar plasticamente un material de pastelería conteniendo una grasa, p. Ej. Chocolate, que consiste en la alimentación del material de pastelería conteniendo una grasa, dentro de una extrusionadora y aplicando presión al material de pastelería conteniendo una grasa, en una forma substancialmente sólida o semisólida no colable, en la parte anterior de una contracción del flujo, a una temperatura a la cual el material de pastelería conteniendo una grasa se extrusiona substancialmente isotérmicamente y permanece en una forma substancialmente sólida o semisólida no colable, para obtener producto extrusionado homogéneamente axialmente con una sección transversal que es practicamente del mismo perfil que la salida de la boquilla de la extrusionadora.
